  • How to make White Sauce ?

    White sauce is my favorite. I made tomato sauce. can anyone tell me how to to make white sauce ?

    That's a broad question. Do you want to make a bechamel mother sauce? Then convert it to something else?
    No one can answer your question without telling us what kind of white sauce you want to make.

        Alfredo Sauce.

        2 TBLS Butter.
        1 Heaping TBLS AP Flour.
        1 Cup Milk.
        2/3rd cup fresh grated Pecorino Romano cheese. More if you want.
        salt and pepper.

        Melt butter in small sauce pan and add flour.
        Cook on medium low to low stirring for a couple minutes.
        Add milk and whisk until it starts to thicken.
        Add cheese a little at a time while whisking.
        Finish up with some fresh chopped parsley (optional) at the very end (after sauce is removed from stove top)
        Add salt and pepper (optional as cheese is salty) to taste.

        Serve over any pasta you like, or toss with pasta.
        Note: This a very basic sauce and any cheese can be used. You want white sauce, you must use white cheese.
        Leave out cheese and you have a mother sauce that you can add most anything you like to it.

        Sauce can be thinned with more milk if required.

                Actually, I have not made this in a while, and will probably not, since I now have to take insulin shots to help manage the glucose levels in the blood. Too much starch.

                    You can create creamy pasta sauce with cream, butter, and cheeses. It is a very easy to make, rich and delicious.

                    Ingredients:

                    50g butter
                    250ml double cream
                    1 clove garlic, crushed
                    150g freshly grated Parmesan cheese
                    4 tablespoons chopped fresh parsley

                    Method:

                    Melt butter in a medium saucepan over medium low heat. Add cream and simmer for 5 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in parsley and serve.

                        My mother taught me how to make white sauce with milk for fish pie and with added cheese for cheese sauce. It was a valuable lesson as it's a basic sauce for all sorts of dishes. She also taught me how to make a sauce using stock instead of milk - another basic with great potential. In those days we used butter/margarine/cooking fat/dripping and flour, but now I thicken with cornflour.
