  • Gnocchi made with squash

    My mother-in-law served us homemade gnocchi made with yellow squash, potatoes,flour and egg. The squash gives the gnocchi a wonderfully soft and smooth texture. There was just a hint of squash taste to it but I have to say I think I prefer gnocchi made with part potato and part squash over just plain potato.. She used a tomato sauce and pecorino cheese sprinkled on top.

    Sounds excellent! Except the tomato sauce.

      I've never had a gnocchi made with squash before. I've only ever had it made with chicken, potato, and gnocchi. I'm not a fan of yellow squash, personally, but it might be good with some other varieties.

        I haven't had gnocchi with squash either, although if I were going to, I'd look for butternut squash instead of yellow squash. I love gnocchi but we don't eat it very often for some reason.

          This sounds good. I normally don't really like gnocchi, but I think that they will taste great with squash because I love squash so much.
