    On nights when I don't want to go to too much trouble to cook and still want something tasty and pretty, I'll bake pieces of whitefish in tin foil. I lay the fish in the tin foil and drizzle with olive oil, lemon juice, salt and pepper. After that I'll put chopped red peppers, tomatoes and green onions on top and wrap the foil up. Super easy! Bake at about 400 for 15 or 20 minutes. Because of the oil and juice, I have never overcooked them, even when I went a little long on time.
