    I am looking for a simple banana muffin/bread recipe with whole wheat flour and white flour. I found one I like, but it calls for wheat bran which I don't have on hand. Is there anything I can substitute for it?

        Hello Delphinium,
        Here is my recipe for healthy banana muffins. You may use wheat or white flour as well as a variety of healthy add-ins, such as dried fruits, nuts, seeds,etc. Also, this recipe uses vegetable oil instead of butter. Hope you enjoy it!

        Healthy Banana Bread

        Heat oven to 350 degrees and grease muffins tins or use paper liners. This makes about 24 muffins or two loaves.

        3 cups flour, wheat or white or half of each
        2 teaspoons baking soda
        1 teaspoon salt
        1/2 teaspoon baking powder
        1-2 teaspoons cinnamon
        1/2 teaspoon nutmeg
        4 eggs
        2 cups sugar
        2/3 cup vegetable oil (I use canola oil)
        2 cups mashed banana
        1/2 cup raisins or dried fruit
        1/2 cup nuts or seeds

        In a small bowl, mix together first six ingredients. Set aside.

        In a large bowl, beat the eggs, sugar, oil, banana, raisins, and nuts. Add flour mixture gradually and mix until well blended.

        Spoon into muffin cups (I like to sprinkle a little cinnamon sugar on each muffin). Bake for about 20-25 minutes or until muffins test done. Cool before serving. (If making loaves, bake for 45-55 minutes, cool 10 minutes before removing from pans and then cool completely before slicing.)

        Here are some variations that may interest you --------
        Instead of banana, try 2 cups of applesauce or canned pumpkin. You may also substitute 3 cups shredded apple, zucchini, or carrots for the banana.
