            Yes, anything being cold smoked must be salted, cured or fermented prior to smoking. Cold smoking can be a very long process, so meats will be in the danger zone for bacteria contamination for a very long time. The salting, curing or fermenting prevents contamination throughout the smoking period and allows time for the meats to lose moisture (the point of cold smoking).
