    I am pressure canning meat these days and have a question. Is it a safety issue when they say "do not add liquid" when doing a cold pack for meat? Or is it just that the meat will have its own liquid and doesn't need it? I see the "DO NOT" instruction everywhere but absolutely no explanation. I'm willing to follow directions (especially in something this important) but I would really like to know WHY. Does anyone know? THanks.
