PILAV RICE WITH CHICK PEAS
This rice is tasty with added spices such as ginger, chilli pepper, garam masala and onions.

I mainly light Basmati rice. I like that nutty aroma and taste, but it IS a little expensive.

Rice Pilaf

Servings 4

Ingredients

3 tablespoons unsalted butter
1 shallot, thinly sliced
1 ½ teaspoons kosher salt
Freshly ground black pepper
2 cups basmati-style long grain rice
3 cups low-sodium chicken broth
1 bay leaf
1 sprig fresh rosemary



Directions

1. Melt the butter with the shallot in a medium saucepan over medium-low heat. Season with the salt and pepper and cook until the onions are soft, about 5 minutes. Add the rice and stir until coated with the butter. Increase the heat to medium-high. Let the rice cook until toasted, stirring occasionally, about 5 minutes more.

2. Stir in the broth, bay leaf, and rosemary. Bring to a simmer over low heat, cover, and cook until all the broth has been absorbed by the rice and the rice is tender, about 15 to 18 minutes. Remove from the heat and let set for 5 minutes. Discard the rosemary and bay leaf. Fluff the rice with a fork and serve.



Note I halved this recipe and it works just fine. And used Vidalia onion about 1 rounded tablespoon minced. A fresh rosemary sprig about 2 ½ inches long, and very small bay leaf.

Fried Rice (this works great for meat or vegetable rice)

Ingredients

2 cups cooked white rice (1 to 2 days old) (rice measurement is taken after it has been cooked).
1-2 eggs beaten
2 tablespoons milk, for 1 egg or 4 tablespoons milk for 2 eggs
½ cup yellow onion halved set on its end sliced into ¼ inch slices
½ cup coarsely shredded green cabbage
¼ cup thinly sliced celery
1/4 cup frozen peas & carrots, frozen peas and shredded fresh carrots. (If using fresh shredded carrots add them with the cabbage.)
1 clove garlic, minced
¼ cup broccoli florets, cut into small pieces
½ to ¾ cup diced cooked meat, such as, diced ham, bacon crumbled, chicken diced, or chopped shrimp (or omit if you want vegetable fried rice)
¼ cup bean sprouts, coarsely chopped
¼ cup vegetable oil
¼ to ½ cup soy sauce, to taste




Directions

1. Heat wok over medium high heat, when hot add the onion; cook for 2 to 3 minutes. Add the broccoli, and cabbage, and cook for another 2 to 3 minutes, frozen peas and carrots, and garlic. Cook for another 2 to 3 minutes, until the vegetables are to the doneness. Remove from the wok and set aside. Add the oil to the wok and let it heat for a couple of seconds. Add the rice and stir. If it starts sticking add more oil as needed. When rice looks like it has re-hydrated and is getting soft then start drizzling the soy sauce over the rice to color it. Then add the egg to the mixture and cook stirring until the egg is done. Add the vegetables back to the wok and cook stirring until everything is heated through.

one of my go to's is any rice. usually it is a quick cooking minute or instant rice.
This makes about 2 servings.

1/2 cup rice (instant or minute)
1/2 cup chicken broth
2 tablespoons shredded carrots, chopped
2 tablespoons broccoli, finely chopped
salt and pepper lightly.

Put all into a bowl, stir, then microwave for 1 1/2 to 2 minutes. let stand for a few minutes to let the rice absorb the liquid.

Serve as a side dish.

Brown Minute rice made with beef broth, and add minced broccoli and shredded carrots.

I did a latin asian fusion fried rice today and i loved it! had chipotle peppers, roasted corn, spinach, broccoli, soy sauce, black pepper....thats it

Hi,
I like brown rice, it is kinda nutty and very satisfying.
And you dont need to eat as much of it as the white one :)
You also get the nutrients from the brown rice.
It is more expensive, I admit but definitely wort it.
