I love homemade wholegrain breads. But until recently, I could make them successfully only in a bread machine -- which seemed to me to take all the fun and all the wonderful, old-time, fragrant involvement out of the process. I want the joy of watching the breads rise, punching down the dough, and seeing my own delicious loaves emerge.
Finally, I'm starting to get it! This article (http://www.backwoodshome.com/articles2/blunt112.html) made the big difference. It goes into the background of how bread works and why. Then it goes on to some fantastic recipes. Thought this might help some others who like the healthy, hands-on process, but who've sighed over too many fallen loaves.
The article also has a wholegrain sourdough starter, which I'm going to try next.
