Post your favorite casserole recipes here! they are easy, comforting and Very Tasty. I love to make them every now and then. When I am not trying a new recipe. LOL!

International Cabbage Casserole


Ingredients

½ pound ground beef
1 link Johnsonville Hot Italian Sausage
2 links Johnsonville Sweet Italian Sausage
1 large onion chopped (1 cup)
½ cup uncooked instant rice
½ teaspoon salt
½ teaspoon pepper
1 can condensed tomato soup
¼ cup water
4 cups shredded cabbage
Sour cream, if desired
Chopped chives, if desired


Directions

1. Heat oven to 400 F.

2. Cook beef, sausage and onion in 10 inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in rice, salt, pepper, soup and water.

3. Place cabbage in un-greased 2 quart casserole. Spoon beef mixture over cabbage.

4. Cover and bake about 45 minutes or until hot and bubbly. Top with sour cream and chives.

Overnight Meatall and Pasta Casserole

Ingredients

1 (14 to 15 oz.) jar your favorite tomato pasta sauce
1 (1 0 ¾ oz.) can condensed Cheddar cheese soup
1 cup water
3 cups uncooked mini lasagna noodles (mafalda)
1 cup frozen bell pepper and onion stir fry, larger pieces cut up
1 18 ounce frozen cooked Italian meatballs
6 ounces (1 ½ cups) shredded Mozzarella cheese
2 tablespoons chopped fresh parsley


Directions

1. In ungreased 13 X 9 inch (3 quart) glass baking dish, combine pasta sauce, soup and water; mix well. Stir in uncooked noodles, and bell pepper and onion stir fry. Add meatballs; turn to coat with sauce. (Noodles should be completely covered with sauce.) Cover tightly with foil; refrigerate at least 8 hours or overnight.

2. When ready to bake, heat oven to 350 F. Bake casserole, covered, for 45 minutes.

3. Uncover baking dish; sprinkle with cheese and parsley. Bake, uncovered, an additional 5 to 10 minutes or until casserole is bubbly and cheese is melted.



Notes. This is very easy and very tasty.

Caesar Chicken Pasta Casserole


Ingredients

7 ounces (2 cups) uncooked dried penne pasta
2 cups chopped cooked chicken
¾ cup creamy Caesar dressing (like using Light Done Right Classic Caesar or Golden Caesar Dressing)
½ cup low sodium chicken broth
1/3 cup chopped green onions
¼ cup finely chopped tomato
1 ½ cups shredded mozzarella cheese
1 ½ cups Caesar seasoned croutons ( I like to use Cheese Garlic flavor)
¼ cup grated Parmesan cheese



Directions

1. Heat oven to 350 F. Cook pasta according to package directions. Drain.

2. Meanwhile, combine all remaining ingredients except the croutons and Parmesan cheese in large bowl. Add cooked pasta; stir to combine.

3. Spoon pasta mixture into un-greased 2 quart round casserole. Top with croutons and Parmesan cheese. Bake for 20 to 25 minutes or until heated through and croutons are golden brown.


Notes Cut Caesar dressing by 1/8 cup. Add more mozzarella. Add garlic powder about ½ to 1 teaspoon.

Chicken Black Bean and Corn Enchilada Casserole

Ingredients

1 tablespoon oil
1 cup chopped onions
1 large garlic clove, minced
1 (15 oz.) can black beans, rinsed and drained
1 (9 oz.) frozen corn, thawed
2 cups diced cooked chicken
1 (10 oz.) package corn tortillas
1 (19 oz.) can Enchilada Sauce
8 ounces (2 cups) shredded cheddar cheese



Directions

1. Heat oven to 350 F. Spray 8 inch square (2 quart) glass baking dish with nonstick cooking spary.

2. Heat oil in large skillet over medium heat until hot. Add onions; cook 4 to 5 minutes or until tender, stirring frequently. Add garlic; cook and stir 30 to 60 seconds or until softened. Stir in beans, corn and chicken. Remove from heat.

3. Cut stack of tortillas in half; cut each half into ½ strips. Place 1/3 of tortilla strips evenly in bottom of sprayed baking dish. Top with 1/3 of enchilada sauce. Layer with half of bean mixture and half of cheese. Cover with second 1/3 of tortilla strips and second 1/3 of enchilada sauce. Layer with last half of bean mixture and remaining 1/3 of the tortilla strips.

4. Top with remaining enchilada sauce. Sprinkle with remaining half of cheese. Spray sheet of foil with cooking spray. Cover baking dish with foil, sprayed side down.

5. Bake at 350 F. For 30 minutes. Uncover; bake an additional 8 to 10 minutes or until bubbly.

Hamburg Stroganoff w/ Noodles.

2 tablespoons oil
1lb ground beef, chicken or turkey*
1 each onion, gree pepper and two stalks celery - all chopped coarsely
4 cloves garlic chopped
1cup sliced mushrooms (if desired)
16 ounces sour cream
1-1/2 cups tomato ketchup
1 tespoon each salt, black pepper, seasoned salt, basil and thyme.
1 bag boiled noodles



Directions;

1. Heat oven to about 350 degrees Fareneit.

2. Heat oil. Begin cooking hamburg, chicken or turkey until brown or opague over medium heat in large skillet or a 5-qt Dutch oven.

3. Add chopped onions, green pepper, celery & garlic & sliced mushrooms. Cook for an additional 45 minutes, or until veggies are soft.

4. Meanwhile, add noodles to a pot of water that has come to a rolling boil. Cook just until aldentee`, but not soft. Drain off water, but do not rinse pasta. Let sit for a few minutes. Sauces have a much better chance of sticking to unrinsed hot pasta.

5. Drain any accumulated fat from cooked ground meat / veggies.

6. Add sour cream, ketchup & seasonings to cooked ground meat, stirring lightly.

7. Add drained hot noodles. Toss lightly to get noodles incorporated andcoated with mixture.

8. Pour mixture into oiled or sprayed casserole dish or and oblong pan.

9. Bake in preheated oven for about 45 minutes or so or until casserole is browned on top and is bubbling throughout. If you like the finished product a bit drier, you can leave it in the oven a bit longer. Cool slightly.

Enjoy!

* Ground chicken or ground turkey can be used in place of ground beef for a more fat-free reduced-calorie dish..

Tuscan Chicken Pasta Servings 6 to 8


Ingredients

8 ounces Rotini
½ cup diced onion
2 cloves garlic, minced
¼ cup chopped oil packed sun dried tomatoes
2 medium zucchini, cut into matchstick strips
1 tablespoon olive oil or vegetable oil
26 ounces tomato and Basil Pasta Sauce, or your favorite flavor pasta sauce
1 cup cooked chicken strips
¼ cup grated Parmesan cheese


Directions

1. Begin cooking rotini according to package directions.

2. Meanwhile, in a sauté pan Add oil, onion, garlic, zucchini; Cook over medium low heat until onions are tender. Add the sundried tomatoes, cook another 5 minutes.

3. Stir in pasta sauce and chicken, continue to cook stirring another 5 minutes or until the sauce and chicken are heated through. Combine sauce mixture, with hot drained pasta and cheese; toss to coat.

Chicken Alfredo Casserole

Serves 6
Ingredients

1 can (11 ounces) refrigerated soft bread sticks
1 jar (16 ounces) Alfredo pasta sauce (homemade alfredo)
1/3 cup milk
1 pound frozen broccoli, cauliflower and carrots, thawed and drained
2 cups cut up cooked chicken
2 tablespoons grated Parmesan cheese
1 teaspoon Italian seasoning



Directions

1. Heat oven to 375 F. Unroll bread stick dough; separate at perforations to form 12 strips and set aside.

2. Mix pasta sauce, milk, vegetables and chicken in 3-quart saucepan. Heat to boiling, stirring occasionally. Spoon into ungreased rectangular pan, 13 X 9 X 2 inches.

3. Twist each dough strip; arrange crosswise over hot chicken mixture, gently stretching strips if necessary to fit. Sprinkle with cheese and Italian seasoning.

4. Bake uncovered 20 to 30 minutes or until breadsticks are deep golden brown.

Here's one I grew up on. My mom use to use canned tuna fish, but I changed it when I moved out on my own to canned chicken breast.

Chicken Casserole
Ingredients
1 large bag of regular or unsalted potato chips (crushed)
1 large can of chicken breast (I use Tyson, Sweet Sue or Valley Fresh)
1 can condensed cream of chicken soup
1 1/2 to 2 soup cans of milk
1/2 to 3/4 cup peas (I use frozen)
Directions
Preheat oven to 350 degrees
In a large bowl combine all the ingredients; blend well.
Pour mixture into a greased casserole dish; cover and bake for about 30 minutes. I like to then take the lid off and let bake for 5 to 10 minutes more to brown the top. My husband insist on having jellied cranberry sauce with this casserole.
Serves 6-8 people

1 lb. ground beef or ground turkey
2 pkgs of frozen chopped spinach (thawed and drained)
1 cup of sour cream
1/2 cup instant rice
1 can cream of celery soup
1 TBS oregano
1 clove garlic (minced)
2 TBS dried minced onion
12oz mozzarella cheese (grated)
salt and pepper
1 cup mushrooms (if desired)

Pre-heat oven to 350 degrees, Cook ground beef until brown and drain. Add oregano, garlic, minced onion, salt and pepper, and cook for 3 mins on medium heat. Remove from heat and add cream of celery soup, sour cream, mushrooms, and uncooked rice. stir until completely mixed. Add spinach stir until completely mixed. Put into 13x9 casserole dish and top with grated mozzarella cheese. Cook untill sides are brown about 30 to 45 mins.

This was the only way to get my kids to eat spinach, and everyone loves it.

•10 to 12 average size russet or Yukon potatoes peeled and quartered
•8 ounce package cream cheese at room temperature
•1/2 cup butter
•1/2 cup 2%, whole or evaporated milk
•2 cups (16 ounces) sour cream
•2 cups shredded cheddar cheese
•4 to 6 strips of bacon cooked and crumbled
•1 Tablespoon minced chives or green onions
•salt and pepper to taste

Place potatoes in a pot, cover and boil until potatoes are tender, about 15 to 25 minutes. Drain. Mash potatoes by hand or with an electric mixer or in a food processor, just be sure not to over mix. Mix in cream cheese, butter, milk, salt and pepper, sour cream and half the bacon. Mix until smooth but don't over mix or it will become sticky and gummy.

Pour into 9x13 pan and sprinkle with cheese, remaining bacon and chives or green onions. Cover with foil and bake at 350 degrees for 15 to 20 minutes.

I don't think this is a casserole, just something we discovered was easy on lazy vacation days.

Make two boxes of mac and cheese according to box.
Open two cans of Beef and macaroni dinner.
Mix them together, place in buttered lazagna pan
sprinkle top with sharp cheddar cheese and gooey
mozzarella cheese, about a cup of each, don't cover, bake in 350 preheated oven for 15 minutes. Scoop onto plate.

HASH BROWN CASSEROLE

2 lbs. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red – green – yellow – orange – or a mixture of all)
1 lb. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 – 8oz. packages of shredded cheese
½ cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)

Grease a 9 x 13 baking pan, wipe excess with paper towel.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoes…then
Peppers…
Mushrooms…
Ham..
Onions (reserve about ¼ cup)
Mix eggs & milk together…….I added about 2 TBLS. Tabasco…more to your taste… pour slowly over all.
Cover with shredded cheese….then sprinkle over all
Remaining onions…
Olives…
Bacon…
Cover and refrigerate overnight.
Uncover and bake at 375 degrees for 35 – 45 minutes…until browned and cheese is melted.
Serve with sour cream and/or salsa.
