Oven-Baked Beef and Beans

1 cup beans
6 cup water
2 tbsp flour
2 tsp Salt
1/4 tsp black pepper
1 ea bay leaves
8 oz tomato sauce
1 tbsp yellow mustard
1 tsp chili powder
1/2 tsp basil
2 ea onion chopped
2 tbsp bacon grease
1 clove garlic minced
2 lb stew meat

Sort and rinse beans. Bring beans and the 6 cups water to a boil. Simmer 2 minutes. Cover and remove from heat. Let stand at least 1 hour.
Trim all fat from beef and cut into 1-inch cubes.
Combine flour, salt and pepper in a plastic bag; put in the beef cubes and shake to coat beef. Brown the beef in the bacon drippings; drain off the fat.
Drain the beans, reserving 2 cups liquid. Combine beans, beef, reserved liquid and remaining ingredients.
Cover tightly and bake in 325-degree oven for 2-1/2 hours or until meat and beans are done.

Really? Salt in beans before they are cooked? Never once has that worked for me, the beans are always hard. The salt prevents the beans from cooking properly. The same goes for brown rice.

I haven't encountered this also but, I usually soak beans or rice in water before cooking. it depends on what I will cook. :)
