Have you ever made your own french bread? How did you do it?

I found a recipe for it I was going to try tomorrow, but now that I look at it, I realize I don't have the bread flour that it calls for, only regular flour. So I began looking up recipes online and some of them seem quite difficult.

I am wondering if I can make regular white bread, like I do everyday, and just bake it differently. I'm just not sure which way to do it. The recipe I was going to follow says to refridgerate the dough, then spray it with water, and bake it with water in the oven. Another recipe doesn't call for any of that, but to brush egg whites on it instead.

I just want something easy that will still taste good, so which way should I do it?

wow, what a coincidence, I'm currently making a french baguette. Well, I'm using the recipe found in Joy of Cooking (the latest edition) and well, the recipe there calls for All-purpose flour instead of bread flour. French baguettes are authentically made with only four ingredients; flour, yeast, water and salt.

if you want the recipe, i'll email it to you.
