SPICY PRAWN AND AVOCADO SALAD
Prawns mixed with sesame oil, sesame seeds, sliced avocado, lemon juice, chilli and herbs makes it an excellent dish as a starter.

On of my husbands favorite starters is Shrimp cocktail. I don't like cold shrimp so I saute them in olive oil, butter, garlic, onion powder, and Durkee Brand Citrus Grill Seasoning. then a splash of wine at the end. the I serve it with Emeril's Remoulade


Ingredients

½ cup Creole mustard or other mild whole grain mustard
½ cup prepared horseradish
¼ cup finely chopped yellow onions
¼ cup finely chopped green onions
¼ cup finely chopped celery
2 tablespoons sugar
1 ½ tablespoons paprika
1 ½ teaspoons Worcestershire sauce
1 teaspoon granulated garlic
¼ cup vegetable oil
¼ cup red wine vinegar


Directions

1. Combine the mustard, horseradish, yellow onions, green onions, celery, sugar, paprika, Worcestershire, and garlic in the bowl of a standing mixer, and mix on medium speed until well blended. With the machine running, slowly add the oil in a steady stream and continue to mix until the mixture is thick and emulsified. Slowly add the vinegar in a steady stream and mix well to blend.

2. Transfer the sauce to an airtight container and refrigerate until well chilled before using, at least 2 hours. (store in an airtight container, this sauce will keep refrigerated for up to 5 days.)

Hi all this is my favourite starter recipe as I love scallops.
This serves 2.
YOU NEED
12-15 scallops
1 shallot or small red onion
1 tbsp butter
pinch of sugar
dash of water or white wine
1 clove of garlic, diced
50 g prawns, defrost if frozen
salt and ground black pepper
Mix green salad to serve.

First chop the onion finely and fry in a non stick pan with butter for about 5 minutes until it is just turning brown. Add the sugar and mix to caramelize. Add the scallops and stir and cook until both sides are cooked for about 5-7 minutes. Add dash of olive oil if needed. Pour some water or wine, prawns and cook for further 2 minutes. Add salt and pepper to taste just before serving. Serve it on a bed of crispy salad.

SQUID WITH FRESH CHILLIES AND GINGER

250 g squid hoods
2 tbsp oil or butter
3 spring onions, diced
1 tsp fresh ginger, grated
1 red chilli , sliced thinly
Soy sauce and sesame oil for drizzling
Sprinkle of sesame seeds.

Prepare the squid by cutting down the centre, score in diagonal pattern and cut into 5 cm squares.
Heat oil in a non stick pan, add ginger, onion and chillies. Add squid and stir. Add little water and cook until cooked through. Add soy and sesame oil and cook for further 2 minutes. Sprinkle with roasted sesame seeds just before serving.

Chicken and avocado salad with seeds

250 g cooked chicken, sliced
1 avocado, sliced
1 apple, sliced
Bowl of salad leaves
2 tbsp mixed seeds ( pumpkin and sunflower )
2 tbsp natural yogurt
Paprika.

Mix chicken, avocado, apple and salad leaves together in a bowl. Add the seeds and pour the yogurt over and mix. Sprinkle with paprika just before serving.

I sometimes put sunflower seeds on my salad.

There's some in the fridge. Just can't find them because the fridge is so packed with stuff.

I like to add toasted sesame seeds to my Asian Style salads.
