Does anyone have any good recipes for zucchini? Our garden is full of them this year. The only thing we usually make with them is a double chocolate zucchini cake (it is heavenly). It would be nice to have some cooking recipes for it too.

my favorite way to cook zucchini is to steam it in a pan, cover it till it's just slightly crunchy still, then sprinkle some parmesan cheese over the top, cover it again and cook another five minutes. then add a little butter and salt. the kids love it!

I like zucchini fried,I take zucchini, cut them into little sticks,flour them, dip inegg then fry about 350 degrees.

Here are a few recipes that I use when my zucchini go crazy.
Zucchini Frittata
3-4 cups very thinly sliced zucchini
1 finely chopped medium onion
2-3 finely chopped cloves of garlic
1/2 cup finely chopped fresh basil and/or parsley
1/2 cup baking mix (Bisquick)
1/3 cup oil (olive or cooking)
1/2 tsp. dry oregano (optional)
1/2 tsp. salt
Pepper to taste
1/2 cup grated Parmesan cheese
4 lightly beaten eggs
Preheat oven to 350ºF and oil a 9"X13" baking dish. Put sliced zucchini in a large bowl. Add remaining ingredients one at a time, mixing well after each addition. Pour into prepared dish and top with extra cheese. Bake about 25-30 minutes until set and top is golden brown. Let cool. May be served warm as a side dish with chicken, pork, etc. or as a light lunch with a salad or fruit. May be chilled and cut into small squares as an appetizer. Freezes well.
Zucchini Soup
(No exact measurements here -- just go for it!) This creamy soup is delicious served warm or cold. Top it with grated Parmesan cheese, croutons, a spoonful of sour cream, chopped onions, or tomatoes, etc.
Dice or slice zucchini and put into a skillet with about an inch or so of chicken or vegetable broth. You may wish to add some slices of onion or a few cloves of garlic. Simmer the vegetables until just fork tender. Cool and then puree in blender or food processor until smooth and creamy. You may add more broth while processing to thin the soup to your desired consistency or you may add milk or cream. I am lactose intolerant so I add broth and the soup tastes so creamy that you would think it had milk in it. You may also add basil or other herbs as well as salt and pepper to the soup as you process it. This soup freezes very well. Make lots for the winter.
Zucchihi Parmesan
This casserole is great as a main dish or a side dish. It freezes very well, too. (Again, no exact measurements here.)
Slice zucchini long way, about 1/4" to 1/2" thick then brush them with olive oil and sprinkle with salt and pepper. Either saute them in a pan or grill them until just fork tender and lightly browned.
Oil a casserole and cover the bottom of the casserole with your favorite pasta sauce (with or without meat, homemade or bought). Layer some of the zucchini on the sauce. Add grated Parmesan (you may also add slices of Mozzarella, Cheddar, etc. in place of the Parmesan or with it). Add more sauce, zucchini, cheese. Continue with the layers, ending with cheese. Cover the casserole with foil and bake at 350ºF until bubbly (remember to put a tin under the casserole to catch the drips).
I love to grill, saute, or bake thick slices of zucchini that have been brushed with olive oil and sprinkled with salt, pepper, and herbs of choice. They make a delicious veggie side dish. I also like to make zucchini bread with dried cranberries, nuts, and sometimes chocolate chips. It freezes well for use during the holidays -- delicious warmed and spread with butter or cream cheese or your favorite jam/jelly!

Here is the recipe for the chocolate zucchini cake
1/2 cup margarine
1/2 cup oil
1-1/2 cup cugar
2 eggs
1 tbsp vanilla
1/2 cup sour milk
1/2 tsp cinnamon
1/2 tsp cloves
2 1/2 cups flour
4 tbsp cocoa
1/2 tsp baking powder
1 tsp baking soda
2 cups of grated zucchini (for less work chop it, and put in the blender in pieces)
1/2 cup chocolate chips
Place all moist ingredients in a blender or food processor. Blend until smooth mixture is forumed. Mix all the dry ingredients together in a large mixing bowl. Add moist to dry, and mix until nice and smooth. Mix in the chocolate chips. Bake at 325 degrees for 40-45 minutes.
Enjoy.

Hi liketobake - my mom's garden frequently is " overrun" - you can substitute zucchini (grated) in carrot cake recipes, in banana bread recipes, you can slice it, dip in seasoned flour and pan fry in a bit of butter, slice and eat as "carrot sticks", darn, drawing a blank at the moment, but will think of others.

Our garden was also overrun with zucchinis last summer. I cut them up and put them into the freezer for later use. I stumbled upon this recipe today, and decided to try it out. It calls for courgettes (which is another name for zucchinis). I served it with a big pot of homemade pea soup. It was fabulous!
Cheese and Courgette Cluster Bread
Makes one loaf
4 courgettes, coarsely grated
6 cups of flour
4 teaspoons of easy-blend dried yeast
2/3 cup freshly grated cheese
2 TBSP olive oil, plus extra for greasing
Lukewarm water
Milk, to glaze
Poppy seeds or sesame seeds, to sprinkle
Salt and ground black pepper
1. Put the grated courgettes into a colander and sprinkle with salt. Let stand for 20 minutes. Then rinse the courgettes thoroughly, drain again and pat dry.
2. Sift the flour into a large bowland add the yeast, cheese, 1/2 tsp salt, and pepper to taste. Stir in the oil and courgettes; then add enough lukewarm water to make a firm but still soft dough.
3. Knead the dough for about ten minutes, then return it to the bowl, cover with lightly oiled plastic, and leave in a warm place for about an hour, or until doubled in bulk.
4. Lightly grease a deep 9 inch round cake tin. Knock back the dough and knead it again. Divide it into eight pieces and roll into smooth balls. Fit these into the tin, placing one in the center, and the remainder around the outside.
5. Glaze the loaf with a little milkand sprinkle over the seeds. Cover lighly with oiled plastic and leave to rise in a warm place until the balls of dough have doubled in size.
6. Bake in a preheated oven (350-400 degrees F) for 35-45 minutes, until it is golden brown, and sounds hollow when tapped on the base. Cool on a wire rack and eat as soon as possible.

Yeah, my Mom and Grandmother used to bake a "zucchini bread" that tasted exactly like banana bread. It was the best! I know that my Mom used to bread the zucchini using eggs and a cracker meal. Then she would fry them. :)

* Fried Sesame & Pork Rolls *
- Ingredients
1/4 lb. Pork
2 tsp Soy sauce
1/2 tsp white sugar
10 sesame leaves
1/2 cup all-purpose flour
1 egg
10 leeks
salt and pepper to taste
- Prepare
1. rinse the sesame leaves in cold water
2. mince the pork
3. mix 2 tsp Soy sauce, 1/2 tsp white sugar & minced pork
4. mix 1/2 cup flour, 1/2 cup fresh water, salt and pepper to taste & 1 egg
5. roll the 1/40 lb. seasoned pork with sesame leaves
6. fasten the each roll with leek
7. spread the mixed flour on the rolls
8. fry the rolls
