Do you have a favorite southern recipe? If so what is it and do you make it at home or would you like to have the recipe? I love southern cooking. Can't eat it every day but LOVE it none the less. Please come share your southern recipes here!!!

Mary's Southern Sauteed Cabbage
2 tablespoons olive oil
1 head green cabbage, chopped
1 large onion, chopped (yellow or white)
3 cloves minced garlic
1 can diced tomatoes, with most of the juices
1/2 cup real bacon bits
salt and pepper to taste
Directions
In a large saute pan over medium heat, add olive oil, and onion. Saute until for two minutes. add garlic. Saute for another minute add cabbage stir and cover. check frequently and stir until it starts to wilt about half way (meaning it will still be pretty firm). Add tomatoes with juices. stir and recover pan and let simmer for a few more minutes. then stir in bacon bits and let soften. then just season with salt and pepper to taste.

Southern Green beans.
1 pound fresh green beans, cut into 1-2 inch pieces
3 cups water
1/2 to 3/4 cup fresh yellow onion, chopped
1 clove garlic, minced
1/4 cup bacon bits or raw bacon (2-3 slices)
Directions
In a saucepan over medium heat, add the olive oil, and onion, and garlic. saute onnion and garlic for 2 minutes. Add water and beans, and bacon bits salt and pepper, and bring to a boil, reduce heat to a simmer until beans are to they tenderness you prefer.
For Canned Green Beans:
1 can green beans, with liquid
1 medium onion chopped
1 tablespoon olive oil
1/4 cup bacon bits
salt and pepper to taste
Directions
in a medium saucepan add olive oil and chopped onion, and saute until onion is softened. add garlic and saute for 2 minutes. Add green beans, and bacon bits. bring back to a simmer and cook for 2 to 3 minutes. season to taste with salt and pepper.
Note: If using fresh bacon, add bacon first and omit olive oil in fresh bean recipe don't cook bacon first cook beans with fresh bacon. with canned beans, add bacon and onion to pan and omit oil. follow the directions for the rest of the recipe omitting the bacon bits.
Pretty simple. Wore this recipe out in college. :D
SHRIMP JAMBALAYA
• 3 onions
• 1 bell pepper
• parsley
• celery
• 1 bay leaf
• ham hock
• 1 c. tomatoes
• 1 c. shrimp
• 1 c. rice
Saute' onions, celery and bell pepper in bacon fat until soft. Add tomatoes and one cup of water to ham hock. Season with bay leaf, salt and pepper. Cook slowly for 1 hr. Add raw rice and shrimp. Cook very slowly until rice is done and water is absorbed. Add more water if necessary.

Sister Mary's Kickin' Potato Salad
Servings 10-15
Ingredients
Potatoes
3-5 pounds russet potatoes, peeled and cut into 1 inch cubes
¼ cup Johnny’s seasoning salt (or lowery’s)
1 tablespoon ground black pepper
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon jalapeno juice
Salad Dressing
4-5 tablespoons Johnny’s seasoning salt
1-2 tablespoons Cajun seasoning (if using a salted Cajun seasoning cut back the either johnny’s or Cajun or it will be too salty)
1 tablespoon fresh cracked black pepper or to taste
2 teaspoons garlic powder (or to taste)
2 teaspoons onion powder (or to taste)
1 cup mayonnaise
½ cup yellow mustard
1-2 teaspoons white vinegar
1 tablespoon juice from Zesty Dill pickles
¾ cup diced zesty dill pickles
1-1 ½ cups red onion, diced
Directions
1. In Dutch oven or 8 quart stock pot;. Add cut up potatoes and all ingredients for potatoes and just enough water to cover; bring to a boil. Reduce heat and boil at a low boil; watching closely as they will cook fast. Take them off before they get too soft as they will continue to cook a little more and you don’t want mush when you start stirring them into the salad. Remove from heat drain water off potatoes and return to hot pot to dry them more.
2. Meanwhile, mix all salad ingredients together. Taste and season to taste before adding to salad. In a large bowl, add potatoes and pour sauce over them. Stir gently to coat all potatoes. Store in fridge

Macaroni and Cheese
Servings 8
Ingredients
Non-stick cooking spray
Salt
3 cups elbow macaroni
1/3 cup all-purpose flour
2 1/3 cups 1 percent milk
¾ cup shredded Fontina cheese
½ cup Parmesan
½ cup shredded sharp cheddar
4 Velveeta
½ cup Japanese (panko) bread crumbs or plain bread crumbs
Directions
1. Preheat oven to 375 degrees F.
2. Spray a 2-quart casserole dish with non-stick cooking spray and set aside. Bring a large pot of water to the boil. Salt water, add macaroni, and cook until al dente. Drain into a colander, run under cold water to stop the cooking, and then set aside.
3. While pasta is cooking, combine flour and milk in a large saucepan, whisking until blended. Cook over medium heat until thick, about 10 minutes, stirring constantly. Add cheeses and cook until melted and thickened. Remove from heat and stir in the macaroni and 1/4 teaspoon salt. Pour mixture into prepared casserole dish. Sprinkle bread crumbs over top. Bake until bubbly, about 30 to 40 minutes.

¾ cup real bacon bits
Salt and pepper to taste
Directions
1. In large skillet over medium heat; add onion, cabbage salt and pepper; stir and sauté for about 5-10 minutes. Cover and turn down. Simmer stirring occasionally until it starts to soften. Then add the tomatoes and juice; recover and sauté until cabbage is softened. Add bacon bits, stir and let simmer for about 5 to 10 minutes. Serve hot.
