What do you put in your omelettes?


Today I made a exqusite omelette. I put in some red pepper, and some red cabbage finely chopped. Umm umm it it was soooo yummy :p

For spices and herbs, this is what I put in:

salt
pepper
parsley
dill
oraganio
taragon
basil

You know what? I've never really had an omelette before. I think my dad once made me his attempt at an omelette, but it wasn't a true omelette which is flipped over and such.

I was just looking up the spelling of omelette in the dictionary when I found this for a definition:

beaten eggs or an egg mixture cooked until just set; may be folded around e.g. ham or cheese or jelly

Jelly?! Haven't heard of that before!

I have never had a jelly omlette but I am sure they are out there. It would be an intersesting thing to try.

I have only seen the folded over omelettes in restuarants. I have never folded the omelettes over. I just flip them.

I love eggs, period. One of my favorite proteins in the whole world!

My Grandma usually did shirred ( baked) eggs. I think she just got tired of cooking different eggs for every guest LOL Here is a basic recipe, you can add most anything, herbs, meat, cheese, explore !!

Baked (Shirred) Eggs

2 eggs
1 tablespoon half and half, light cream, or skim or low-fat milk

Break and slip eggs into greased ramekin, shallow baking dish or 10-ounce custard cup. Spoon half and half over eggs.

Bake in preheated 325 degrees F oven until whites are completely set and yolks begin to thicken but are not hard, about 12 to 18 minutes, depending on number of servings being baked.

I don't make them as my husband doesn't like eggs, and I am not real fond of them either. But we try sometimes. And I like the way this one looks but haven't made it yet. Giant Denver Omelet

The New Classic Cook – Fast & Fabulous

Servings 4 Page 91



Ingredients

10 eggs, beaten lightly
1 ½ teaspoons whole grain mustard
Denver Filling
2 teaspoons vegetable oil
1 large onion, sliced thinly
1 medium red bell pepper, sliced thinly
3 ½ ounces ham, sliced thinly
¼ cup finely chopped fresh parsley
2 small tomatoes, seeded, sliced thinly
½ cup (2 ounces) shredded cheddar cheese



Directions


1. Make Denver filling, then combine eggs and mustard in large measuring cup or small bowl.

2. Heat nine inch non stick skillet; coat with cooking oil spray. Pour ¼ cup of the egg mixture into skillet; cook, tilting skillet, over medium heat until almost set. Sprinkle 1/3 cup Denver filing over half the omelet; using a spatula, fold omelet in half to close.

3. Pour another ¼ cup of egg mixture into empty half of skillet; mixture will spread under first folded omelet. Cook over high heat until almost set.

4. Sprinkle omelet with another 1/3 cup of Denver filling, fold omelet over, onto the top of the first folded omelet. Repeat this process two more times to complete one giant layered omelet. Carefully slide omelet onto plate; keep warm. Repeat layering process to make second omelet with remaining egg mixture and filling. Cut omelets in half to serve.

Denver Filling: Heat oil in medium skillet; cook onion and bell pepper, stirring, until onion is soft. Combine onion mixture with remaining ingredients in medium bowl.

Just an update, I've since had two of Shoegirl's omelettes and... wow.. are they damn good. She burned them the first time and thought I was just saying I loved it to be nice, but even burned it was delicious. Her omelettes are one of my favourite dishes now!

Hmm... now I've made myself hungry.. great.

In my omelettes I like cheese and mushroom but often add ham and onion. I love omelettes!!! So quick and easy to make.
