You will need
1/4 kilo squid, remove skin and ink sac
1 can (439 g) DEL MONTE PIneapple tidbits drained (remove syrup)
1 small ginger, sliced
1 large (300 g) cucumber, sliced into half moons with peel
1 red bell pepper, diced
1/4 cup mayonnaise
1 tsp calamansi juice
Here's how
1. Simmer squids in pineapple tidbits syrups with 1 tsp rock salt and ginger for 8 minutes. Drain and cut 1/4 " thick crosswise.
2. Combine with cucumber, bell peppers and DEL MONTE Pineapple tidbits.
3. Mix mayonnaise and calamansi juice. Season with 1/2 tsp fine salt and 1/4 tsp pepper. Ad cucumber pineapple mixture. Blend well. Chill until ready to serve.
