You will need
700 g pork tongue
3 tbsp DEL MONTE vinegar
1 medium onion, sliced
12 button mushrooms, haled (1/2 cup)
2 medium potatoes cut into strips
1 laurel leaf, crushed
1 can (227 g) DEL MONTE Tomato Sauce
3 tbsp DEL MONTE Tomato Catchup
3 saba banana, sliced and fried
1 medium red bell pepper cut into rings
Here's how
1. Clean pork tongue and wash thoroughly. Boil in 5 cups water and DEL MONTE vinegar for 1 hour, or until tender. Scrape skin with a sharp knife then wash. Chill and freeze until firm. Sliced diagonally into 1/2" thick slices. Marinate in 1/4 cup soy sauce, 1/4 tsp black pepper and juice of 4 calalmansi.
2. Saute onions, mushrooms and tongue in oil. Add potatoes, laurel leaf, DEL MONTE Toamto Sauce, DEL MONTE Tomato catchup, remaining marinade and 1 1/4 cups water. Season with 2 tbsp brown sugar, salt and pepper t taste. Simmer for 10 minutes.
3. Add fried bananas and bell peppers. Continue simmering for 2 minutes or until cooked.
