Today I baked a carrot cake. It was pretty good, but there could have been a few slight improvements. One, I didn't have any ground cloves, so that changed the flavour a bit.
Here is the recipe :)
Carrot Cake
2 cups all purpose flour
2 cups grated carrot (I put mine in the blender)
1 1/4 cups sugar
1/2 vegtable oil (I use olive oil)
1/3 water or milk (I use milk)
1 1/4 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 tsp ground cloves
1 tsp ground nutmeg
1 tsp vanilla extract
3 eggs
1 cup shredded or chopped nuts
Heat oven to 350 degrees C. Grease a baking pan. In the blender blend the carrot, oil, milk, vanilla, and eggs. Mix together all the dry ingredients. Mix the dry and the wet together until smooth. Add additional milk or water if necessary to make a nice smooth cake batter. Pour into pan or pans. Bake for 30-45 minutes, or until lightly golden on top, and toothpick comes out clean.

I used to love carrot cake as a kid.. it was my favourite cake. It's not anymore but it's still really good :)
Although, I've never really been a fan of the white icing on top. It's that there's usually too much; people overdo it... there should just be a thin layer to complement that great orgy of flavours in the cake :)

I also used to love it, but ended up hating it because basically, every cinnamon-flavored muffin or cake I had, ended up tasting like carrot cake!

Here is another carrot cake recipe I made myself. Enjoy!
Carrot Cake
4 eggs
1 ½ cup white sugar
1 tsp vanilla extract
1 tsp rum extract
½ cup olive oil
2 cups all purpose white four
½ cup brown (whole wheat) flour
2 tsp baking powder
2 tsp baking soda
A few shakes of salt
3 tsp ground cinnamon
1 cup skim milk
2 cups chopped carrots
1 cup chopped pecan pieces
Preheat over to 350 degrees F. Grease a 9X13 pan.
In a bowl combine flour (brown and white), baking powder, baking soda, salt, cinnamon, and sugar. Mix well. Stir in pecan pieces.
In a blender add the chopped carrots, eggs, milk, vanilla and rum extracts, and oil. Blend until smooth. Add the blended liquid mixture to the dry mixture. Mix until smooth.
Pour the mixture into the pan. Bake for about 40-50 minutes. Test with a tooth pick (when the tooth pick comes out clean the cake is done). Enjoy.
I chose not to make an icing for this cake because I thought it didn’t need it, and I don’t need the extra calories.
This cake tastes very homemade and healthy for a dessert. I give this recipe two thumbs up!

Here is a defination for you from Wikipedia...
Kahlúa is a well known Mexican coffee-flavored liqueur. It is heavy and sweet, with a distinct taste of coffee..
I'm not sure what a good replacement would be...maybe coffee and rum extract..?? Probably coffee and some type of alcohol (just a little bit). Hope that helps.:D

I might make one soon, but it's going to be a small one.
My hubby loves...I mean...loves Carrot Cake! It's his favorite food! I have tried long and hard to come up with a recipe that fits his taste buds! Some have worked and some have failed.
He's tried Carrot Cake at alot of restaurants too...from Mom and Pop's, to chains, to some of the finest restaurants in the country.

Some sage added would be nice. Or some small amounts of pepper. It can bring out the flavor.

My favorite cake is carrot cake especially if it is moist and with not too much icing.
