Ingredients
1 kg tilapia
2 tbsp salt
2 c tomatoes - chopped
2 c onions - chopped
2 pcs green pepper - chopped
1 c celery, chopped
2 pcs sweet red pepper
1/2 c brown sugar
5 pcs bay leaves
1/2 c brown sugar
1/2 c calamansi extract
1/2 tsp chili powder
aluminum foil
Procedure
1. scale, eviscerate and trim tilapia
2. rinse and set aside in the refrigerator
3. prepare marinade by cooking all ingredients except calalmansi juice for 10 minutes.
4. cool and add calamansi juice
5. remove bay leaf and blenderize
6. soak tilapia in marinade
7. wrap individually with marinade
8. pack and freeze
9. to serve, thaw in the refrigerator and roast or steam for 20 minutes
