How do you make gravy? I know there are many kinds of gravy mix and granules available at the supermarket, but I still remember the gravy that my grandmother used to make from meat stock. Do you still make it that way? If so how do you thicken it?

Gosh So sorry I didn't get to this sooner. I still make gravy the way my grandmothers and mother used to. with the fat or the broth. If I have a lot of stock or broth. I use a mixture of cornstarch and water. approximately 3 tablespoons cornstarch to 1/3 cup water. mix well. Season your broth just exactly the way you want your gravy to taste. then slowly drizzle the cornstarch into the simmering broth while whisking or stirring constantly until it is thick enough for your gravy.

For a fat gravy using the drippings from the meats. Try to gauge the amount of fat you have in the pan (1, 2, 3 tablespoons etc.) and add the corresponding amount of flour. Stir and saute the flour for a minute or two. then start adding your milk add enough milk to cover the bottom of the pan to about 1/2 inch deep. stirring constantly. it will thicken fast, then start pouring about 1-2 cups at a time stirring constantly. adding milk and stirring until it thickens slowly. at this point, it is done. taste and adjust seasoning. you will have to season more for this one as you will be deluting it a lot with all the milk.

Hi Mary, it is interesting to make gravy with milk!!! I used milk for white sauce but not for gravy before. MUST TRY, thank you.
