12 fresh sardines, cleaned, head and tails left on
1/4 cup of salt
2 tablespoons of freshly ground black pepper
3 tablespoons of extra virgin olive oil
12 lemon wedges

Wash lightly with cold water the sardines. Drain them. Pour the olive oil on the sardines and toss them gently to coat. Sprinkle with salt and pepper on both sides.The grill must be medium to high hot. Cook the sardines for ~2 min per side. Serve hot with lemon wedges.

Thanks Samuel. I LOVE any kind of Sardine, especially grilled. Every time I go to the EU I have them at least twice. Fresh ones are so very hard to come by here in the states.

I find the grilled Sardines less loathsome than the fried ones. They're delicious and easy to cook. Come on, anyone, but I mean ANYONE can cook this, it takes less than 30 minutes. The smoky flavour is awesome. I don't like the fried Sardines, they're just too fat for me. And I don't like them canned also.
