You'll need:
about 5 leeks
3 or 4 eggs, beaten
3/4 C. whole-wheat flour
1 cup of milk
1/2 lb. feta cheese
salt and pepper
olive oil
Wash the leeks, cut them in small discs. You should use only the white part of the leek. Oil a baking pan and saute the leeks for 5 minutes. In a mixing bowl, combine the flour, salt and pepper and make a well in the center into which you pour the beaten eggs and milk. Work the mixture until smooth and add the crumbled cheese and the leeks. Oil a baking pan well and add the mixture. When the base can be easily pierced with a knife, the leeks are ready.
