I like pumpkin pie and I don't bake it just for the Halloween. Just scoop out the pumpkin flesh from the jack o' lantern and you're half way done. Combine sugar (1 cup), spices (1 teaspoon cinnamon,1/2 teaspoon ginger,1/2 teaspoon nutmeg
,1/2 teaspoon salt) and flour (2 tablespoons). Add 1 cup of evaporated milk, two eggs, well beaten, 1 tablespoon of margarine, melted and just beat until smooth. Pour into unbaked pie shell. Leave it into the oven for about an hour, or until the fork/knife comes out clean when inserted in center of pie.

Thank you for the recipe, Samuel! I love pies in general, but pumpkin pies are my favorite. After every Halloween we bake enough of them to last a whole month! Then Thanksgiving comes, and then Christmas, so it's really a food fest at the end of the year.

Here in the states a lot of people do not do their pumkin pies from scratch. Part of it is the time factor. Additionally, those that have tried do not know the difference between a Gourd ( Halloween Jack O Lantern) and a squash ( a true pumkin for pie, if you will) and are often displeased with the outcome.
As a change, how about trying this old Southern recipe:
Mississippi Sweet Potato Pie
INGREDIENTS:
4 ounces butter, softened
2 cups cooked and mashed sweet potatoes or yams
2 cups granulated sugar
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked
PREPARATION:
Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
Makes 2 pies.
