Hi all! I am a a beginner malecook and i tryied for sometimes to prepare mayonnaise but i have failed to obtain a mayonnaise like my mother. Please tell me the secrets of a good mayonnaise. You have made it from the first anttempt or you tryied for many times?

I tend to go to the store and buy a jar of "Miracle Whip", but for homemade mayonnaise different results may occur whether you use just egg yolks or the whole egg.

I mostly use jared mayonnaise from the supermarket, but I do know how to prepare it at home. You mix egg yolks, oil and vinegar until it becomes pasty... About 10 minutes. It shouldn't take longer... I can't really remember if I prepared mayonnaise from the first attempt... It was a long time ago.

well, an easy to make mayonnaise is this one:
you need:
2 eggs
1 cup of oil
salt
some lemon juice
some mustard
You separate the eggs and use only the yolk. You add the mustard and you steer continuously in one direction, add salt and oil (little by little, this is very important. Never add the oil all at once!) When it becomes a little hard, you can add some lemon juice.
The mustard is used so the mayonnaise won't get ruined. It is optional, but very useful :)

I don’t like making those mayonnaises because I could easily get one on a store. Why go to all the trouble of making one when you can buy an already made? Making one takes a long time.
Those bottled mayonnaise aren’t that expensive in the market.

No, they're not, but i don't like they way they taste.. They seem to be to oily and sometimes i cannot eat them at all.
I prefer to make mayonnaises myself, i don't even make them to often :)
It usually takes me 10-12 minutes to make one and i prefer to have one home made than buy one full of chemicals and bad taste. At least this is how they are int he shops near me, maybe there are different kinds of mayonnaises and i didn't find them yet :D

I also like to make the mayonnaise at home. The one at the shops is not as good as the one I make. Even if I am a beginner in the kitchen, at least thing is getting nicely done each time

Stirring, stirring and stirring! That's the secret. I only messed up things once, when I poured way too much oil. Once you have a small amount of thickening mayonnaise you can poor more and more oil. Squeeze the lemon at the end. Side effect of the "home made" mayo: it only lasts a couple of days. Good taste comes at a price :p .

Wow it only takes me seconds to make mayonnaise. I use an emergion blender and a pyrex cup to hold the ingedience.

In my case the secret is to use good ingredients: fresh eggs (the yolk), oil, mustard and a bit of a lemon juice to make it less likely to make you sick. I don't use boiled eggs or potatoes as some advice so that it doesn't get ruined. I have good luck with it, it seems, and it's always better than anything I'd find in the stores.
