I would appreciate your help in teaching me to choose a good fresh fish for cooking it. Some say it's the head , other's it's the eyes ...or maybe it's branchiac leading you to a right fast conclusion. I am not sure ... what would be the leading thread ? Help me ...PLEASE :)

I remembered my mother used to tell me that it’s in the color of the fish. Try to look for fish that is still red in color. You can also trying smelling it. If you smell rotting then chances are they aren’t fresh anymore.

The best fresh fish is the one you fish yourself :D
I recently went fishing with some friends and we did catch some nice fish. They were delicious..
I rarely buy fish from the store because i don't know how to chose fresh fish either ..

Delicious, I don't usually buy whole fish but, they should have clear eyes, if they are foggy then the fish is old, don't buy it. the eyes should looke clear (meaning dark and shiny, reflecting the light).
I usually buy fish that has been cut, and the skin removed. I look at the flesh of the fish. If salmon is the choice, make sure that you can see the lines in the fish, and that they lay together with no gaps, that you can acutally see them is a good sign. if you can't see these things, then the meat is pulverized and will not be good. Also check the plastic wrapping ont he fish, move it and see what color the liquid inside is, it should be clear. NEVER buy any meat that has a milky secretion at all in the package. Many consumers are still unsure when they're going to assess the fish's quality. Actually, it's easy to find out whether it's as it should be.
Three rules of thumb for fresh salmon and cod:
Fresh salmon fillet should have:
* Consistent red colour. When it starts going bad, it will have a blotchy surface.
* Shiny and dry surface. When it starts going bad, it gets a slimy, greyish coating.
* Fresh odour. It can also smell like melon or cucumber. If it's bad, it will smell rotten, like a sour dishcloth.
Fresh cod fillet should have:
* An even, light surface. The fish is bad if it has yellow spots and transparent parts on the surface.
* Shiny and dry surface. Bad fish has a coating of slime on the surface.
* Fresh odour. Sea-fresh, or neutral to weak fish odour. The fish is starting to go bad if it has a sharp, strong odour.
Pre-packed fresh fish fillets are becoming more common in Norway. But when the fillet is lying in a package with plastic over it, you can't smell the fish.
Senior Scientist Margrethe Esaiassen at Fiskeriforskning believes that the consumer still gets a good impression of the quality by checking the fillet's appearance.
"Pre-packed fish has a use-by date and basically, the consumer has to trust that those who produce and sell the fish are doing their jobs. When you get home, you can also check the quality by smelling the fillet. If it smells bad, you should return the fish to the shop", says Esaiassen.
