Steering in the maionnaise

How do you steer when you are making mayonnaise? Do you prefer to steer clockwise or counter wise?
It is known that if you change directions the mayonnaise can end up pretty bad.
Of course, it can be re-done, but still, it's more comfortable to only steer in one way.

I too heard that in a mayonnaise you must steer one way only.
I tried to do it otherwise one time and i ruined it.. I threw it away and went buy some from the store.
I know it can be redone, but i don't know how.
As a little secret, i know if you add mustard at the beginning the chances of it being ruined are a lot smaller.

In the Northern Hemisphere steer counterclockwise, in the Southern Hemisphere steer clockwise.
