What are your favourite herbs and spices? I consider spices to be very important for a cook and most cooks have a certain favourite one...
You can also mention how you grow them.. In example, do you use a mixture such as 1 part top soil, 1 part sand, 1 part peat moss ?
Fresh herbs are a real favorite of mine and I hate having to be dependant on the supermarket(s) to get them. How about you?

I think that salt is the most common and the widely used among them. I can only think of salt when you mention of the spices. I forgot that pepper is also a spice. Honestly there are only few ones that I know.

My favorite herbs are parsley and dill. With that herbs I season almost all kind of food because fresh leaves give flavor. More that, that herbs enrich the food with vitamins .

I love oregano. It's an important culinary herb, associated with pizza. The Italian and Greek cuisine use this herb a lot, it's a Mediterranean plant. It's often used in tomato sauce, but I even used it on barbecues. I think I've even tried to sprinkle it on mashed potatoes.

I am never without fresh parsley and thyme. I love dill too but it doesn't keep very well and i have to use it pretty quickly. I grow parsley, thyme and mint in the pots in the garden. The more you cut them the more you will get. I also chop and freeze herbs in air tight containers, they are great if you are in a hurry, ready to cook with.

oh yeah, and if you have extra, whiz them in a blender with a little water and a small touch of oil. Put in ice cube trays. When frozen solid, put in zip bags and use just want u went when ready. Great for the winter also.
