I'm not an expert in thai cuisine, but I know a few recipes and would like to share one that has been very popular at some parties I have been invited by a couple of friends:

Kaeng Ka-Ri Kung

Ingredients:
500 grams shelled and deveined prawns
2 1/2 cups coconut milk
1 tbsp. yellow curry paste (Nam Phrik Kaeng Ka,ri)
1 tbsp. fish sauce
1/2 tsp. salt
11/2 tsp. sugar
1/2 cup cherry tomatoes
2 fresh chilies, deseeded and sliced

Preparation
Put 3/4 cups of coconut milk into a wok or pan, bring to boil over medium heat, stirring constantly, and boil for 5 minutes. Add the curry paste, stir well, and simmer for 10 minutes. Then, add the fish sauce, sugar, salt and remaining coconut milk and simmer for 10 more minutes, stirring regularly. Finally, put in the cherries tomatoes, prawns and chilies, bring to, a boil, and remove from heat. Serve with cucumber relish.
