Hey everyone, I just found this place after much searching for a semi active food and cooking forum. This one seems to be more active than most. I just love talking about cooking and food so you will probably see me here a lot as I have a lot of down time at work :)

I prefer cooking, though I really love baking bread and have started to venture my way into more baking. I really love baking bread actually....
Favorite thing to make.....man that's a tough one. I love making pizza's, my favorite that I make is a curried chicken pizza with feta cheese....I also make a really good chicken parmesan.....
Favorite food to eat....seafood....I love seafood....

My "signature" bread is what I call my beer french bread. It is a basic french bread recipe, but I substitute Bass Ale for all of the water in the recipe. I, personally, think it is awesome. I also make a really good italian herb bread too.

No problem.....
1 bottle (12 oz) Bass Ale (any beer will do, but please do not use MGD, or Bud, or any domestic for that matter....good ales work best...)
4 cups fluor
1 tsp salt
1 Tbsp Maple Syrup
1 packet active yeast.
Olive Oil.
Warm the beer up to room temperature. I usually will pull a bottle out of the fridge the night before, otherwise you can put it in the microwave (out of the bottle) for about 10-20 seconds. Place the beer, maple syrup, and yeast in a bowl for at least 5 minutes to "activate" the yeast.
Once active, use a stand mixer and whisk it (I do this to bring some air into it...I wisk it on about 4 on my mixer for about 1 minute.). Slowly mix, adding about 1.2 cup of flour at a time. After 1 cup is in, I add the salt, and swirl in some olive oil. Continue mixing until it form a nice ball that is still slightly tacky. Take out of mixer and need by hand for about 5 minutes. Place into an oiled bowl, cover, and keep somewhere warm and draft free to rise for 3 hours. Do not punch down, take out the dough and start kneading it to for about 2-3 minutes. form into a long loaf, place on a baking stone or baking sheet with some corn meal...cover with towel and let rise for 1-2 hours. Cut a few small slices in the top, spray with water and bake in a 425 over for 15 minutes....reduce heat to 390 and bake for 15 more.....
