Does anyone have any tips or tricks for icing cakes, and other sweet treats?

I love making Chocolate Ganache.

Although I do not like overly sweet icings.

I make Boston Cream Cupcakes and make a dark choclate ganache for the top of them that is great for cutting the sweetness of the cupcakes and custard filling.

Dark Chocolate Ganache

15 oz. Dark Chocolate
1 1/3 cup Heavy Cream

Heat cream on stove over medium heat until boiling. Remove from heat and stir in chopped chocolate and mix until all melted and well blended. Top whatever you choose to put the frosting on and regrigerate to set.

Enjoy!

There doesn't seem to be much going on in this tread... I was looking for the same thing: some tips for icing different sweet treats. If anyone could provide any info on this subject (not links :o ... those I can browse for myself), it would be very appreciated. watsjame, thanks for sharing that delicious recipe.

I think that one of the reasons why no one is answering this thread is because it doesn’t provide much information on what is being asked. Personally I found it difficult to understand what he really needs to know.
