Lebanese Vine leaves Recipe


Ingredients
Mince meat (Mutton Lamb) 500g
1 cup of Basmati rice
Handful of Mint leaves
Boned Lamb (Baby or Mutton)
Salt
All spice
Vine Leaves

How to Make

Wash the Basmati rice 5 times and soak for 2-24 hours then drain the rice. Soak vine leave for 1/2 an hour in hot water.


Place rice, mince meat, mint leaves, t-spoon of all spice and salt and mix all ingredients together.

Using a large pan, place the boned meat at the bottom of the pan and cover with one layer of vine leaves. Add (your desired amount of) all spice and salt on top of the laid out vine leaves.

Place a small amount (amount of rice mixture depends on the size of leaves) of the rice and meat mixture in the vine leaves and fold the leaf tightly and place on top of the meat and laid leaves. Repeat till all the mixture and leaves are finished. Add water till it reaches the top of the folded vine leaves (It is best to place a bowl on top of the folded vine leaves so they are held down and do not rise up and open when water is placed in the pan). cook on a low heat till all the water is gone and add more water during cooking if necessary - you will know to add more water if the rice is un cooked when you take out a folded leaf. Usually take 1 1/2/ hours to cook.
