So does anyone else have their menu planned for Christmas lunch/dinner?

I am still thinking about it but it won't be a traditional menu. Here in Australia, it will most likely be a hot, hot day where I am so we will probably go with a seafood lunch.

I am doing a Traditional Victorian Goose. Been wanting to for years, just because LOL. My sister decided to add a whole ham for the "regular" people. LOL

How about a couple of Hawaiian recipes for Christmas down under:



Hawaiian Kampachi

INGREDIENTS
Four 6-oz portions Kampachi
Salt, to taste
Freshly ground white pepper, to taste
Grapeseed oil, to taste

DIRECTIONS
1. Lightly salt and pepper all sides of the Kampachi.
2. Lightly toss the fish in grapeseed oil.
3. Grill for ½ minute on each side.
4. Remove and place fish on a pie tin and preheat oven to 375 degrees.
5. Heat the grilled Kampachi in the oven for 3 minutes only to finish its cooking.





Shrimp, Kaffir Lime, and Coconut Sauce

INGREDIENTS
1 Tbsp butter
2 shallots, peeled and sliced
1 stalk lemongrass, split
2 cloves garlic, split
1 cup white wine
2 cans coconut milk
2 Tbsp fresh basil, chopped
2 Tbsp fresh cilantro, chopped
4 kaffir lime leaves
1 1/2 tsp green curry paste
Salt, to taste
Pepper, to taste
8 shrimp, peeled, deveined, and cut into large round pieces



DIRECTIONS
1. In a stainless steel pot, heat the butter and add shallots, lemongrass, and garlic; cook for 2 minutes without browning

2. Deglaze with the white wine; bring to a boil.

3. Add coconut milk, basil, cilantro, and Kaffir leaves.

4. Simmer for 10 minutes; remove from the flame and let steep another 10 minutes.

5. Pass through a fine strainer and place in a stainless sauce pot.

6. Reheat the mixture; once at a simmer, add 1 tsp. green curry paste and salt and pepper, to taste.

7. Add shrimp and keep warm.

We will probably go with the traditional turkey dinner that we do every year. It is usually fairly cold here so it is nice for the oven to heat up the house a few hours.:D

I found a great recipe for pear salad on www.ezraweb.com. Look under Feature Articles_Christian Living. I tried it, and it was awesome! Very easy to put together as well. I think it will be a nice compliment for your Christmas fish dinner.

Well I had to look up kampachi on Google as I had no idea what that was. Obviously a type of fish which I am sure can be replaced with something similar. Sounds delicious.

I like the shrimp recipe too but then I adore shrimp (or prawns as we call them here) so any recipe with them in it always appeals to me.

And karattop I can't access that recipe because it requires a login to view it.

I think Seafood would be good or just some Turkey or Ham. As long as there is a conversation between the meal and when everyone's enjoying, that would be all good :)

I agree Adin. The food is only part of it - the company that you are with and the conversation are more important.
