When I first learned to make candy 40 years ago, I was taught to put parafin wax in the chocolate to seal it. I've just started making candy again, and recipes don't seem to call for parafin any more. Does anyone still use parafin? If not, how do you seal the chocolate coating to keep the filling fresh?
