I think people tend to shy away from artichokes because they look a little weird and they don't lend themselves to any obvious method of preparation. This is a tragedy, because they're actually ridiculously simple, and they don't have to be boring! A lot of people just steam them and serve them with butter, but you can really spruce them up into a fantastic, fairly healthy meal. Plus, they're entering the peak of their season, so you can get them pretty cheap right now in most places.

You can also hollow out the center, then stuff the inside and the outer leaves with a breadcrumb and grated parmesan mixture. Cook in a big pot with an inch of vegetable broth, wine, herbs and garlic for about an hour on low heat.
