View Full Version : Can one substitute bread flour for "gluten flour"?

I found a recipe for making whole wheat bread which sounds yummy. It calls for white whole wheat flour (which I have never heard of or used before, but I'm game...) and "gluten flour". Could I substitute bread flour, which is high-gluten, for the "gluten flour"? You only need a small amount of it and I don't bake enough to justify a bag of super-expensive flour that's mostly just going to sit around.

No. "Gluten flour" is not really flour as we know it. It's basically all protein and used as a food additive, rather than a flour.

it's not really worth the money either if you don't use it often...like you said the bag will go to waste

I agree. There is no reason to buy such an expensive bag of flour if you're not going to use it regularly.

My aunt once tried this and the recipe was ruined. She didn't knew back then, but everyone learns these kind of things in time. "Gluten flour" should pretty much be used only as an additive.
