View Full Version : How to ensure grilled food doesn't fry itself?

Hi

I have started to gas grill all my food but sometimes i notice the fat comes out of the meat and flows around it, as a result the fat heats up and fries within the grill. I am new grilling so do you know what i may be doing wrong? Some questions:

1.After I have finished cooking, and the meat dries up i notice chunks of white substance(i think its fat) on the meat pieces and it feels oily to eat? Should this be there or does this show i am doing it wrong? Should it always come out feeling non oily?

2.If you put foil paper under the food, will this stop the fat from falling into the skillet or does it still go through?

3.Should i be even using foil paper for gas grilling, what benefit does it have?

4. Suppose you get a normal flat tray( http://www.johnlewis.com/Shopping/PhotoGallery.aspx?Type=SKU&ID=230497721 ) put foil on it and then just place the food and grill, is this proper grilling or should you be using this one: http://www.ransomspares.co.uk/parts/cookers-hobs/universal-grill-pan-400mm-x-230mm/120344.htm . I am concerned that the food is frying itself because i am using the former tray and the fat has nowhere to go.

any other tips

I would expect a grill pan to have a wire rack like the second one, it's how all my grill pans have come when we've bought new ovens. This of course would also solve your frying problem because you line the tray in foil, but put the food on the rack and then fat drips off it onto the foil.

Grilled food (outdoor Grill) will not cook in it's own fat if you place the food (protein)
directly on the grill. The fat will drip from the meat,pork,chicken,fish whatever, into the drip pan located beneath the fire. Cooking in a solid pan will will five a diffeent flavor as the food is cooking in it's own fat-and all the Food's Flavor is in the Fat.
Cooking directly on the Grill Grate-will yield a less Fatty Meal-FYI
Cooking on the Pan will yield results like a Flat Top Griddle would.
Personal preference-No Right or wrong here-Try both and make your decesion.
