For some reason, I found myself thinking about Julia Roberts in Runaway Bride (yeah I know, bust my taste in movies now;)) earlier while I was mentally going over my grocery list. I remembered how she didn't know how she liked her eggs and that her preference changed depending on the guy she currently was...anyway...
I often go for scrambled with a pinch of salt and pepper and a little milk for that fluffy texture. How do you like your eggs? Do you have any special recipe that is different from the usual things we do with eggs?

I was unaware until recently that in the states there were different terms for fried eggs and that you can pretty much order your fried egg like you can order a steak (i.e. how well it is cooked).
Anyway the point of that annecdote was that I like my eggs 'sunnyside up' which to me is just a fried egg, here that's what you get... but if I don't feel like having the grease then scrambled egg would be my second choice, same as noemi, seasoned with a bit of milk.

I only like my eggs as an ingredient in a recipe. Never carried for eating them by themselves.

LOVE eggs! Fried eggs with runny yolks, hardboiled eggs with mayo, devilled eggs, poached eggs on a bed of spinach topped with cheese, softly scrambled eggs with Limerick ham or smoked salmon. I like hens' eggs, duck eggs, goose eggs and turkey eggs - and of course quails' eggs with a little celery salt!
The best eggs are those from our own chickens, which free-range all day - beautiful golden orange yolks and nice firm whites, and of course VERY fresh.

Hi mithunchowdhury! I am also new here. :) By half boiled do you mean soft boiled? I like that sometimes, too, esp. with toast. Egg curry sounds good - well, everything curry is good. ;)

Poached and over easy MUST have a runny yolk not even partly cooked!!, scrambled soft, omelette and hardboiled. NEVER EVER BROWN in any way or they get thrown out!!

Darkginger - you're lucky to have fresh eggs all the time. I live in the city and have to do with eggs from the supermarket. I haven't had goose and turkey eggs. How are they different in flavor? As for quail eggs - love em hard boiled with salt!
Turkey eggs are very similar to hens' eggs - perhaps slightly smaller, but I doubt you'd notice the difference if one was served to you. Goose eggs are like duck eggs, but the yolk is massive, and very rich. 1 goose egg is the equivalent of 2 or 3 hens' eggs - I think they have a more eggy flavour, which is great if you really like eggs, but might be a bit too much if you prefer bland eggs.

Scrambled when I'm lazy, poached with slightly cooked yolk on buttered toast if not being lazy.
My grandmother used to make us "eggs on toast" which was an egg cooked in her stove top "poacher" and served on buttered toast. She wasn't a fussy cook and when she would butter the toast, she was so rough that she would tear the bread often buttering her hand, LOL. That was my favorite breakfast growing up, when I make it, it takes me back, I just need to get a poacher like hers to complete the experience!

2 Egg Omelet (Chopped fresh - onion, mushroom, baby spinach ground sea salt & ground peppercorns sautéed in butter till nicely carmelized then 2 scrambled eggs with a tad of water added), sliced vine tomato, red seedless grapes and a cuppa Joe. (After I took the picture I divided the food in ½ to share with hubby)

While scrambled with chorizo is great, I also enjoy them over easy with a piece of toast to dunk in the yolk.

I never thought of using chorizo in scrambled eggs. I've had some chorizo sitting in the fridge - I think I'll make that for breakfast tomorrow. Thanks for the idea!
the way I like eggs for breakfast might be a little different.. kind of a fritatta. that is it is finished in the oven under the broiler.
I've been using 1/4 teaspoon of cream of tartar and 1/4 teaspoon of water just enough to dissolve the cream of tartar. I put this in a coffee cup along with two eggs and beat them with a fork vigorously to incorporate a little air. I know you get a say cream of tartar and eggs what the heck, cream of tartar is usually used to stabilize egg whites, but if you try this it will make your eggs a little softer and a cake like texture. That's the best way I can describe this method. One morning I made eggs without the cream of tartar and did the same with cream of tartar and my house guests that I tried it on. Said there was a difference between the two. I believe there is a difference using cream of tartar in scrambled eggs and I continue to use it. Give it a try for yourself. Here's how I make my eggs.
In a sauté pan or omelette pan I had about a half a teaspoon of butter and some green onions. Melt butter and sauté onions slightly and add the egg mixture to the pan just heat to medium, without stirring the eggs I let them slightly brown. when cooked, about halfway I put them in the oven under the broiler to finish cooking them. And I take them out of the oven, salt and pepper to taste, and plate. I just turned the pan upside down so I get that nice browned egg facing up from the first cooking on the stove top.
Then I like to put some sour cream and some pico de gallo, fresh salsa on top of the eggs. And that's the way I have been making my eggs lately.
as far as chorizo and eggs. There's two basic kinds of chorizo depending on what part of the country you are in. One looks like a hard salami or sausage that is cut up in chunks or sliced. The Mexican chorizo when cooked looks like a oily red to red brown looking paste when mixed with scrambled eggs it is delicious. served as chorizo and eggs are wrapped with a flour tortilla or put on a Mexican roll served as a sandwich or called a Mexican torta meeting sandwich.

I think Pita bread would be fine, you could even use a white sandwich roll with a layer refried beans chorizo lettuce, tomato with guacamole and tomato a Mexican torta. 430 in the morning here and I'm ago make some eggs. Like pictured above. I made the pico de gallo yesterday afternoon. So all the flavors of had time to marry.

Guts your eggs looks delectable! I have always been a huge fan of eggs prepared in all kinds of ways. I never would have thought it add cream of Tatar to any egg dish. I'll probably give it a try :P

Heat pan on medium, melt butter, swirl to coat pan, crack eggs into pan.

Make sure eggs move freely, break membrane in whites around yolk and spread so whites fully set and cook.

Flip and turn heat off, swirl eggs in pan.

Tigerlilly your eggs look perfect! I never thought of breaking the membrane in the whites, but I'm going to try it! Your eggs look just the way I like mine, but they often don't turn out as nice as the ones in your photos!

Hey Noemi,
I like mine exactly as you described, with milk, salt and pepper. But one day, I saw a cooking programme on TV, and in that, instead of milk, the person just used water. So I tried. Frankly, the taste is not as...how should I put it...hmm wholesome? But I can't say it's not delicious.
If I'm doing eggs for my daughter's sandwich to school, I'd skip the milk. I imagine it'll last longer?
Oh yes, we always have our scrambled eggs dipped in chili sauce. I guess we're just 'spice' people:p

Yes, you CAN use water in place of milk for the scrambled eggs. I've seen lots of TV chefs do that.

My favourite are scrambled on toast, soft boiler with soldiers or fried with a runny yolk!! <-- mostly because you can break the yolk and chop 'em up with salt and tomato sauce in a super-tasty hot egg sandwich :P Yum!

I'd forgotten to update you on this - I have tried water several times since I read your tip. You are right - it does make the eggs fluffier! I do still use milk at times as it gives a creamy flavor. Thanks for this awesome tip!

egg is the no.1 dish in our family, we never have to missed eggs in the refrigerator,It always have,whenever,whatever we like it very much even if hard boiled,soft boiled fried,sunny side up or scrambled..or sometimes I put some potatoes small cubes combined in egg,or tomatoes w/ onions on top of scrambeld eggs, or sometimes onions only..That's only the way how we cook eggs.

I just used eggs in a way that my mom used to do. Do you know the dish called adobo? It's a traditional Filipino dish which is usually made with pork or chicken (or a combination of both. Here's a recipe for adobo (http://recipe-finder.com/recipe/13609837688454485397)). This time, I added a couple of hard boiled eggs into the pot 5-10 minutes before the dish was done cooking. The eggs soaked in the adobo flavor and were mouthwateringly good!

Dinner last night:
Fresh asparagus steamed until just tender then sautéed in butter. Eggs scrambled with fresh grated Romano cheese, sea salt, ground pepper and milk added to pan and cooked until set.

If I order over or poached and the yolks are "hard" they go back. If I order eggs any other way and they are come out brown they go back.

I sometimes put cheese in mine also, just before scrambling them.
I have to say, my favourite thing to do with eggs is boil them and put some toast on. Not quite hard boiled, but no runny yolk left and I scoop out the yolk and spread on the toast to make a boiled egg toastie. I don't put butter on the toast and I don't eat the whites as they make me ill.
It's not exactly a foody thing to do, but my goodness I love it.
I do love scrambled, poached and omlettes, but I can only have a few forkfulls or I end up with really bad stomach cramps from the whites.
Ooooh, I did an experiment on family recently with scrambled eggs. I did a blind taste test. I mixed up eggs, seasoning and milk in 1 big bowl, split the mix in two.
Half was cooked traditionally on the hob and half was done in the microwave.
Family taste tested and all 7 chose the microwaved over the hob cooked. They then blind tested me and I thought the exact same.
It was shown on TV by a chef called Gino DiCampo and I will always scramble eggs in th microwave now...much nicer and much easier to clean up after :-)

I've never known scrambled eggs get brown on the hob either but my othr half is terrible at cooking fried eggs. Last time he tried he gave himself a VERY nasty hot oil burn. He seems to manage to burn the bottom without cooking the top no matter how many times I show him how to get cooked eggs and no browny burned bits on the bottom...lol

I love eggs. Its my favorite food. How I like to eat them depends on the time of day. Hard boiled for breakfast, with salt and pepper. For lunch or dinner, I prepare them scrambled with some onions, tomatoes, green chillies, ginger and cilantro....and have it with toast or wrapped in a tortilla or roti.

Normally I would agree with you but in this case, Omelette is the correct spelling for what is a classic French creation. We need to show some respect and be faithful to the source I think. This is also relevant when pronouncing classic foods correctly such as Paella and Bourguignon to mention a few.

I like them many ways, but probably scrambled is my fav. I make them with salt, pepper and a bit of water. They are light as a feather and great along with traditional accompaniments or pancakes. I don't care what time it is. I will whip them up at midnight if I am in the proper mood. :D
