Do the world class cooks follow reciepes to the key? Since cooking is an art, just wondering if when they spice things they measure the spices or is it a little bit of this and a little bit of that? I guess without measuring it would be difficult to replicate the reciepes.....Interesting thoughts......

I know a couple of 4 star chefs in Europe. They either take a recipe they have seen or eaten and modify it to their cooking style. This is done as an art form, as you say, and they do not measure. Part of the creative process. Once they get "their signature version" they have their Sous chefs use the recipes, measuring the ingediants as they go. Once the head chef likes the version it is written down and distributed to the line chefs and included in the menu. After a while, i am sure that the live chefs can then cook it by memory.

I love the original Japanese iron Chef and always tried to duplicate the recipes. Nothing like years of experience though to get it right the first time.
