How far in advance can I make creamy polenta? Can I hold it over a water bath? Is there anything special I need to do?

You can hold it, but it won't stay creamy. It gets stiffer as it sits and the corn absorbs more of the liquid.
It only takes a minute to make, so why can't you just make it a t the last minute?

Yeah, it DOES have to be used or eaten almost immediately.
Same thing applies to grits, oatmeal and most other hot cereals. They are all starchy, and it is the starch that makes them behave that way.
As kids, we used to make corn meal mush and eat it as a cereal with milk and sugar, which today, is now called polenta without the milk and sugar.
