This is one of my favourite soups.In fact it is avery similar recipe to "Paella" but in its soup form.
Ingredients
one cup of canned tomato
one cup of canned white beans
150 g of fresh green beans
500 g of chicken cut into pieces
salt
one expresso coffee cup of olive oil
one expresso coffee cup of rice per person
three expresso cofee cups of water for each coffee cup of rice.
Fry first the chicken in a deep saucepan with the olive oil and after 7 minutes add the green beans and tomato until the chicken is well browned and greenbeans are tender.Pour in the water and as it starts boling,put the rice in and let it simmer for 19 minutes.Serve it immediately after.
Do you wish to give this dish a real Valencia touch? Cut an onion in very thin slices three hours before,rub them with plenty of salt and leave them in receptacle with water for three hours.Wash them well under the tap running water and place them again in another receptacle,this time fully soaked with vinegar for another hour.Rinse them and put some on top of your rice soup when served.
