I made my jack-o-lantern into a nice cake tonight. Here is the recipe.
Pumpkin Snack Cake
(a not too sweet snack)
Original Recipe from Company’s ComingMostly Muffins by Jean Pare
Modified greatly by Liketobake
All purpose flour 1 ½ cups
Whole wheat flour 1 cup
Brown sugar (lightly packed) ½-3/4 cup
baking powder 1 ½ tsp
baking soda ½ tsp
ground cinnamon ½ tsp
ground nutmeg ¼ tsp
ground ginger ¼ tsp
margarine 4 tablespoons
buttermilk (or soured milk) 1 cup
eggs 2 medium/large
Pumpkin ¾ cup (fresh/frozen/canned)
almonds ½-1 cup (depends on how much you like nuts)
vanilla extract 1 tsp
Preheat oven to 350 degrees F.
In a blender blend the pumpkin, brown sugar, vanilla extract, milk (sour), and eggs until smooth. Add all other ingredients to a separate bowl and blend well. Combine the two mixtures. Pour mixture into a prepared (greased if desired) pan (you choose what size). Bake for about 20-30 minutes until lightly golden.
