Wondering if anyone has any recipes to jazz up mashed potatoes? I've always been a big fan and I'm looking for some new and interesting ways to prepare them.......

roasted garlic is always a winner. You can also add in the things usually used to top a baked potato, like sour cream, cheese, bacon and chives. I have added wasabi powder to my mashed and it was quite tasty.
My "secret" to great mashed potatoes is lots and lots of butter, with some cream or half and half with salt and pepper to taste, you want them to be pretty wet because as they sit they will absorb the liquid and get thicker. You can go from there adding things. One weird way to make very flavorful mashed potatoes is to use Mayonnaise in place of some of the milk and cream, these make them so creamy and flavorful, just don't add too much so all you taste is mayonnaise.

You could try the Irish dishes Colcannon and Champ. Colcannon has cabbage in with the mash - you just add shredded cabbage to the potatoes for the last 5 mins of cooking, then drain and mash together with milk or cream, butter and seasoning. For Champ, finely slice some spring onions (scallions) and stir them through your mash when adding butter.
We also add mashed carrot and/or mashed swede (rutabaga) to mashed potatoes sometimes - brightens up the plate and adds a nice sweet taste. Use plenty of white pepper!
