Hi everyone. I'm new to the forum. I'm looking to meet some nice friends and hoping to get some really great pasta recipes. :)

What kind of recipes?? What kind of pasta? Beef, chicken seafood, gravy etc?

One of my seafood favorites ( I LOVE mussels and shrimp)

This is one I got from Food & Wine magazine a couple of years ago and I love it! Let us know what u like, and I know the group can help!


Pasta with Mussels and Tomatoes

SERVES: 4

5 tablespoons extra-virgin olive oil
1 medium onion, minced
1 large garlic clove, thinly sliced
1 1/2 cups dry white wine
1 pound plum tomatoes, peeled and chopped
1/2 teaspoon crushed red pepper
2 pounds mussels, scrubbed and debearded
Salt and freshly ground pepper
3/4 pound spaghettini
1/4 cup chopped flat-leaf parsley
directions

Heat 3 tablespoons of the olive oil in a large, deep skillet until shimmering. Add the onion and garlic and cook over moderate heat until fragrant and softened, about 6 minutes. Increase the heat to moderately high, add the wine and boil until reduced to 1/2 cup, about 12 minutes. Add the tomatoes, crushed red pepper and mussels. Cover and cook until the mussels open, about 5 minutes. Transfer the mussels with a slotted spoon to a large warmed bowl. Season the sauce with salt and pepper, cover and remove the skillet from the heat.
Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Drain the pasta, reserving 1/2 cup of the cooking water.
Add the pasta and the water to the sauce and toss over low heat for 1 minute. Add the pasta and the sauce to the mussels and toss. Sprinkle with the parsley, drizzle with the remaining 2 tablespoons of olive oil and serve.

This is a yummy chicken pasta recipe:

2 Tablespoons olive oil. 4 boneless chicken breast halves, cut into 1-inch cubes
1 large chopped onion
4 garlic cloves, minced
2 teaspoons fennel seeds
2 carrots, shredded
1 cup white wine
1/42cup finely chopped sun-dried tomatoes
12ounces linguine, freshly cooked
1/2 cup Parmesan cheese

1. Add olive oil and chicken to a large skillet and saute over medium-high heat.
2.Add onion, garlic, carrot, and fennel seeds. Saute until onion is tender, adding chicken broth as needed to keep vegetables from sticking to pan
3. Stir in sun-dried tomatoes and rest of broth.
4. Continue sauteing for about 5 more minutes until carrots are tender.
5. Add chicken mixture to cooked linguine and cheese.

This will serve 4

The Mussel recipe is just delicious. Thank you for sharing. I love seafood and mussels are one of my favourites along with oysters.
