Favorite Omelet Filling

What's your favorite omelet filling? :)

When I make omelets for people I make them personal not generic... some of my favourite topppings or topping I use include:

plenty of cheese (but that always goes on top)
inside stuff:
red or oranges peppers
mushrooms
onions (depending on the person)
bacon
I also put lots of herbs in the egg before in goes in the pan (when it is scramblled in the bowl).

or when we're not burning ourselves ...fresh spinach & gorganzola, shellfish or leftover BBQ

I like cheese, mushrooms and onion. Smoked salmon is nice too.

I am with everyone. Fill it up! My List:

onions
mushroom
any and all cheese
hot peppers
crab
shrimp
lots of herbs
black pepper ( is that a filling?)
green and red pepper
bacon bits
cut green (spring) onions


and I am not sure it is an "omelet" when I am done, but sometimes I also fill it with frozen cubed hash brown potatoes, thawed (they're usually called Southern-style)

Well then, how about this? Shrimp and mushrooms. Just rehydrate the shrimp in the mushroom water, drain, rinse and add to the omelot! Maybe a little chive and/or ginger, yum !!

I was in China last week... The hotel omelete bar put fish sauce in unless you asked not to have it.

Not sure taht I was fan.

i would have to say that my top choice for omelette filling would be mushrooms, followed by tomatoes and lastly bits of ham and bacon. yummy!:) this is making me hungry:D
