This is one of my favourite cookie recipes, taken from Oetkar German Home Baking.
Black and White Cookies
Light pastry
9 oz (250 g) plain flour
1 level tsp baking powder
5.5 oz (150 g) sugar
1-2 teaspoons vanilla
1 teaspoon rum flavouring
1 egg
4.5 oz (125 g) butter or margerine
Dark Pastry
2 level tbsp coco
1 level tbsp sugar
1 tbsp milk
For the Pastry, mix the flour with the baking powder and seive onto a pastry board or cool slab. Make a well in the centre and pour in sugar, vanilla, rum flavour and egg. Draw in some flour from the sides of the well and mix these ingredients to form a thickish paste. Add the cold fat, cut into small pieces, and cover the whole with more of the flour. Starting from the middle, work all these ingredients quickly with hands into a firm smoothish paste. It should stick. Cool well for a time
Cut the pastry into two halves. Blend together the coco, sugar and milk and knead into one of the pastry halves. The two pasties can be combined in the following patterns:
For a pinwheel pattern roll out two equal sized rectangles, one in light and one in dark pastry. Lay them on top of each other (if they don't stick brush with egg white), roll them up together like a swiss roll.
For a chequered pattern, make two snake like rolls of white pastry, make two snake like kind of rolls of dark pastry, but them together in a chequered formation LD

Cut the large rolls into small pieces of equal thickness from the large rolls. Place on cookie sheets. Preheat oven for 5 minutes, bake on medium heat for 10-15 minutes. Remove from pan and let cool on rack.

Today was my Dad's birthday, so I made him his favourite kind of cake. Here is the recipe.
Marble cake (not the box kind). This recipe is taken from Oetkar German Home Baking, and I have made minor modifications to it.
Marble Cake
Cake Mixture
9 oz (250 g) butter or margerine (I often use less)
9 oz (250 g) sugar
2 teaspoons vanilla (my own measurement)
1 teaspoon rum flavour (my own measurement)
1.5 teaspoons Bailey's Irish Cream Liquor
1 1/8 lb (500 g) plain flour
2.5 teaspoons baking powder (my own measurement)
about 1/5 pint (115 ccm) milk (I do this measurement randomly)
3 level tablespoons coco
a well heaped tablespoon sugar
2-3 tablespoon milk (random again, based on consistency)
For the cake mixture, cream the fat and gradually and it to the sugar, flavourings and eggs. Mix the flour with the baking powder and add to the creamed ingredients alternately with milk, but use only as much milk to give a firm dropping consistency. Grease a ring or loaf baking pan. Fill 2/3 of the mixture into the pan. Add the coco, sugar a remaining tbsp to the remaining 1/3 of the mixture. Again mix the coco mixture with enough milk to give a firm dropping consistency. Spread the dark mixture over the light. Then mix the two colors together with a sppon fork, or spatula.
Oven: moderatley hot
Baking time: 50-65 minutes

Flapjacks
3/4 cup butter or margerine
2/3 cup brown sugar
4 tbsp brown sugar
4 cups rolled oats
1/2 cup sunflower seeds
1/2 cup coconut
1/2-1 cup raisins
Optional
chocolate chips (reduce sugar if using)
Nuts
Melt over low heat, butter, sugar, syrup. Remove from heat. Mix together and add to previous, oats, sunflower seeds coconut, raisins etc.
Butter a pan (8"). Place above mixture in pan, flattened. Bake in oven at 350 degrees for aprox 25 minutes. Mark into squares while still really warm. Cool.

I had some more fun in the kitchen last week. It has been a while since I have posted. However I made this recipe myself, so enjoy!
Orange Lemon Sweet Bread
Recipe curtsey of Like to bake
1 cup white sugar
½ cup oil (canola or extra virgin olive oil)
Salt a few shakes
Flour 3 1/2 cups
Baking powder 3 tsp
Baking soda ¾ tsp
Oranges 4 medium peeled
One slice of lemon (slightly bigger then you would get on the side of a glass of ice tea)
Vanilla 2 tsp
1 cup sour milk
3 eggs
Coconut 3/4 cup
In a bowl mix together the flour, sugar, salt, baking powder and baking soda. Add the coconut and mix well.
In a blender or food processor add the remaining ingredients.
Pour the blended mixture into the bowl and mix well.
Pour the mixed batter/dough into a greased baking pan. (A large rectangular one will work well, I can’t remember the dimensions)
Bake until lightly golden on top.

I made these cookies tonight, it is a tried and true recipe.
Chocolate Chip Oatmeal Cookies
1 c. shortening
1 1/4 - 1 1/2 c. sugar
4 eggs
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/2 c. milk
2 tsp vanilla extract
1 tsp Irish Cream Liqueur
3 c. flour
3.5 c. oatmeal
1 c chocolate chips
Cream together shortening and sugar. Beat in eggs, milk and flavorings. In a separate bowl, mix together all dry ingredients. Add to creamed mixture. Drop by spoonfulls onto greased cookie sheets. Bake at 340 degrees C for 5-8 minutes or until slightly golden on bottoms.
Yield: Aprox. 6 dozen cookies

I have not posted in a while. I baked some muffins this evening. It was a recipe I made myself. They were fabulous:p :p :p :p . Here is the reciepe
Pineapple Coconut Muffins
(makes 12 medium sizes muffins)
dry mixture
2 cups all purpose unbleached white flour
1/2 tbsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp nutmeg
coconut (1/4-1/2 cup) unsweetened shredded
moist mixture
2 large eggs
1/3 vegtable oil
1/2 cup white sugar
3/4 cup buttermilk
1 tsp vanilla extract
1 tsp rum extract
1 tsp kahlua
Combine the dry ingredients in a bowl and mix well. Place all the moist ingredients into a blender and blend until smoothe. Combine the dry and the mosit into the bowl and mix until smooth. Place by spoonfuls into muffin tins.
Bake at 350 degrees F or 180 degrees C for about 30 minutes or until lightly golden on top.

This is my favourite Chocolate Chip Cookies recipe from celebrity chef Giada De Laurentiis:-
- 1/2 cup old-fashioned oats
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, room temperature
- 1 cup (packed) light brown sugar
- 1 cup sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 4 ounces English toffee candy (recommended: Heath or Skor bar), finely chopped
- 1 cup hazelnuts, toasted, husked, and chopped
- 1 (12-ounce) bag semisweet chocolate chips
Preheat the oven to 325 degrees F.
Line 2 heavy large baking sheets with parchment paper. Finely chop the oats in a food processor. Transfer the oats to a medium bowl. Mix in the flour, baking powder, baking soda, and salt. Set aside.
Using an electric mixer, beat the butter and sugars in a large bowl until fluffy. Beat in the eggs and vanilla. Add the flour mixture and stir just until blended. Stir in the toffee, hazelnuts, and chocolate chips.
For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1-inch apart (do not flatten dough). Bake until the cookies are golden (cookies will flatten slightly), about 15 minutes. Cool the cookies on the baking sheets for 5 minutes. Transfer to a cooling rack and cool completely. (The cookies can be prepared 1 day ahead. Store airtight at room temperature.)

Brownie Drop Cookies
Amount Measure Ingredient -- Preparation Method

1 (15 ounce) package fudge brownie mix
1/4 cup water
1 egg
1/2 cup chopped nuts
Heat oven to 375o. Lightly grease cookie sheet. Mix brownie mix,
water and egg in large bowl with spoon. Stir in nuts (dough will be
stiff).
Drop dough by rounded teaspoonfuls onto cookie sheet. Bake 6 to 8
minutes or until set. Cool slightly; remove from cookie sheet to wire
rack.

Today I was hunting for a baking reciepe for bananas. I usually just make banana bread or banana mufffins. However since I made banana muffins just a few days ago I wanted to try something different. I found the reciepe below online. i tried it and it was fabulous! It must be noted though I made many many modifcations to it. I won't post them all just any additional items I added. The main reason I modified it so much (even though I usually morph reciepes) is because we had an abundence of bananas that were really starting to go bad, some of which were bad already and I could not use.
Anyways here is the recipe. Enjoy:)
Banana Split Cake

Banana split cake recipe, with banana, chocolate, and strawberry batters.
INGREDIENTS:
• 3 cups all-purpose flour
• 2 teaspoons baking powder
• 1/4 teaspoon baking soda
• 3/4 teaspoon salt
• 1 cup butter
• 1 1/2 cups sugar
• 4 eggs
• 1/2 cup mashed banana, about 1 large ripe banana
• 1/2 cup sour cream
• 1/2 cup milk
• 1 teaspoon vanilla
• 1/2 cup strawberry preserves
• red food coloring
• 1/2 cup instant cocoa (sweetened)
PREPARATION:
Grease and flour a 10-inch Bundt pan or fluted tube pan; set aside. Stir together flour, baking powder, baking soda and salt; set aside. In large mixing bowl, beat butter on medium speed until light, about 30 seconds.
Add sugar and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. In medium bowl, mash banana. Add sour cream, milk and vanilla; stir to combine. Add dry ingredients alternately with banana mixture to creamed mixture; beat well after each addition. Reserve 2 cups batter in 2 bowls -- 1 cup of batter in each bowl. Stir strawberry preserves and food coloring into 1 cup of the reserved batter. Stir instant cocoa mix into the other cup of reserved batter. Spoon half of the plain banana batter into pan. Top with strawberry batter. Spoon more plain batter over this. Top with cocoa batter. Bake at 350° for 60 to 70 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Cool for 10 minutes on a wire rack, then remove from pan to cool completely. Sift powdered sugar over cooled cake, or drizzle with a chocolate or vanilla glaze. Serve with vanilla ice cream and sauce, if desired.
I added rum extract to this for some extra flavor. I would have used real rum if we had any. Although I think many different alcohols would go well with bananas and chocolate.:p

Sugared Soft Ginger Bars (there is a link to a photo of the recipe below):)
Land O Lakes – On line recipe
Yield 48 Bars
Ingredients
1 ¼ cups sugar
1 cup butter or margarine, softened
1 egg
3 tablespoons molasses
1 teaspoon vanilla
3 cups all purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 ½ teaspoons ground ginger
¼ teaspoon salt
¼ teaspoon ground cloves
3 tablespoons coarse decorator sugars (if desired)
Directions
1. Heat oven to 350 F. Combine sugar and butter in large mixer bowl. Beat at medium speed, scraping bowl often, until well mixed (1 to 2 minutes). Add egg, molasses and vanilla. Continue beating, scraping bowl often, until creamy (1 to 2 minutes).
2. Reduce speed to low; add flour, baking soda, cinnamon, ginger, salt and cloves. Continue beating, scraping bowl often, until well mixed (1 to 2 minutes).
3. Press dough into greased 15x10x1 inch jelly roll pan. Sprinkle decorator sugar on top (if using). Bake for 16 to 20 minutes or until golden brown. Cool completely. Cut into desired shapes with knife or cookie cutters.
Tip: To make ornaments: carefully make hole in top of bars with a drinking straw. Cool; thread 1/8 inch ribbon through hole and tie into bow.
High altitude information: Reduce sugar to 1 cup and increase flour by ¼ cup to 3 ¼ cups. Bake at 350 F. for 18 minutes.

- 1/2 cup old-fashioned oats

- 1 cup margerine
- 1/2 cup (packed) light brown sugar
- 1 cup sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon kahlua
- 1/2-1 cup of sliced almonds
- 3/4 cup of chocolate chips
Preheat the oven to 300 degrees F.
Using an electric mixer, beat the margerine and sugars in a large bowl until fluffy. Beat in the eggs, vanilla, and kahula. Add the flour mixture and stir just until blended. Add the flour, oats, baking soda, baking powder and mix well. Add chocolate chips, and almonds and mix well.
For each cookie, drop 1 rounded teaspoon of dough onto sheet. Bake until the cookies are golden.

No Fuss Holiday Bars (everyone seems to love these. And they are the easiest to make)
Land O Lakes – Online Recipes
Makes 36 bars
Ingredients
Crust:
1 1/3 cups all purpose flour
½ cup butter softened
¼ cup sugar
Filling Ingredients:
See Variations Below
Directions
1. Heat oven to 350 degrees. In small mixer bowl combine all crust ingredients. Beat at low speed until mixture is crumbly. Press on bottom of 9 inch square baking pan (except for chocolate toffee variation). Bake for 15 to 20 minutes (except for chocolate toffee variation) or until edges are lightly browned. Follow directions for filling variation below. Cool; cut into bars. (or break up the pieces don’t have to be uniform).
Pecan Pie Bars:
¾ cup corn syrup
½ cup sugar
2 eggs
2 tablespoons all purpose flour
½ teaspoon vanilla
1 cup chopped pecans
½ cup semisweet chocolate chips
Directions
1. In small mixer bowl combine syrup, sugar, eggs, flour, and vanilla. Beat at medium speed until well mixed. By hand stir in pecans. Sprinkle semisweet chocolate chips over crust. Pour filling over hot crust. Continue baking for 30 to 35 minutes or until set. (20 bars).
Zesty Lemon Bars:
¾ cup sugar
2 eggs
2 tablespoons all purpose flour
3 tablespoons lemon juice
¼ teaspoon baking powder
1. In a small mixer bowl combine sugar, eggs, four, lemon juice, and baking powder. Beat at low speed until well mixed. Pour filling over hot crust. Continue baking for 18 to 20 minutes or until filling is set. Cool slightly; sprinkle with powdered sugar. (20 bars).
Chocolate Toffee Bars:
½ cup semisweet or milk chocolate chips
½ cup butterscotch or vanilla milk chips
½ cup chopped pecans or other nuts (if desired)
Directions: Prepare crust ingredients as directed. Press firmly on bottom of 13X9 inch baking pan. Bake for 20 to 25 minutes or until crust is lightly browned. Immediately sprinkle chips evenly over crust. Let stand 3 to 5 minutes or until soft. Evenly swirl over crust with butter knife or back of a spoon. Sprinkle with nuts if using. (36 bars)

You can get hundreds of great recipes (many of them baking) from this great guide I found. They are all secret restaurant recipes, so you know they are good. The link is in my profile. Here is an example recipe:
Hard Rock Cafe BBQ Beans
Ingredients:
2 15 oz cans pinto beans (with liquid)
2 tablespoons water
2 tablespoons cornstarch
1/2 cup ketchup
1/3 cup white vinegar
1/4 cup brown sugar
2 tablespoons diced onion
1 teaspoon prepared mustard
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon coarse ground black pepper
1/2 cup shredded pork
Instructions:
1. Prehead oven to 350 degrees F.
2. Pour entire contents of the can of pinto beans into a casserole dish (with a lid).
3. Dissolve the cornstarch in a small bowl with the 2 tablespoons of water. Add this solution to the beans and stir.
4. Add the remaining ingredients into the dish, stir well and cover.
5. Bake for 90 minutes or until the sauce thickens. Stir every 30 minutes. After removing the beans from the oven, let the beans cool for 5 to 10 minutes before serving.
Serves 6 to 8 as a side dish.

INGREDIENTS
* 2 1/2 (1 ounce) squares unsweetened chocolate
* 1/2 cup butter
* 2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1 1/4 cups white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 2/3 cup sour cream
* 2 cups semisweet chocolate chips
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). In the microwave or over a double boiler, melt unsweetened chocolate and butter together, stirring occasionally until smooth. Sift together flour, baking soda, baking powder, and salt; set aside.
2. In a medium bowl, beat sugar, eggs, and vanilla until light. Mix in the chocolate mixture until well blended. Stir in the sifted ingredients alternately with sour cream, then mix in chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

ok so i was looking for a cc cookie recipe & this one sounded very cool but i don't get the "Mix in the chocolate mixture until well blended" part does that mean the squares? are they supposed to be shaved or melted or something? Help!
