View Full Version : Preserve Eggs for a Longer Period

1. Wash the eggs and put them slowly in a container full of lime water or mustard oil. The eggs will not only be preserved for long - they will not get spoiled either.
2. For storing eggs for longer time say for about 30-40 days, you should apply any cooking oil with the help of brush on the egg shell. They will stay for long time.

The first thing you must check is that the eggs are fresh before attempting to preserve them.

The next thing is to make sure that whatever medium you use keeps the eggs airtight. Either of the methods mentioned above are acceptable.

I do know of people who also grease the eggs with salt butter and pack the eggs in salt or bran making sure that the packing completely encases the eggs.

I have watched this thread with delight and awe. Thanks to all for the great recipes.

BUT, as the saying goes:

AMERICAN BY BIRTH AND SOUTHERN BY THE GRACE OF GOD !

I MUST enter our quisessential bar offering and good old boy recipe:

Pickled Eggs

24 eggs
6 cups Cider vinegar
2 tablespoon black peppercorns
1 tablespoon Whole allspice
1/2 tablespoon Mace
1/2 tablespoon Coriander seeds
1/2 tablespoon Cardamon seeds
1/2 tablespoon Cloves
10 Small hot red peppers
3 tablespoons Sugar

Cook eggs in simmering water for 15 minutes. Place eggs in cold water, remove shells and pack into sterilized jars; in a kettle combine vinegar, spices and sugar. Bring to boil, reduce heat and simmer for 5 minutes. Pour hot liquid over hardboiled eggs. Place lid on jar and store in refrigerator when cooled. Use within a month.

You can color them with beet juice or food coloring and lay them over salads or eat them with peanuts and a beer !!!!

I now have a weekend project!
I've seen them in pubs but never saw anyone eat them much less have a cool recipe. I will no longer be afraid.

actually, they are very good. Just don't eat too many. tummy ache and heavy flatulence...sp? :)

Store the eggs in the refrigerator at constant temperature of 40 F.
Keep the eggs in the original cartoon and place them on one of the shelves inside the fridge.Eggs may be kept for up to five weeks if its are stored properly in the refrigerator.

Hmm.. those are good advices, thank you for sharing them with us.
Easter is coming along and i now that the eggs will get the price really high, i am thinking of buying eggs now, so i won't have to spend a lot of money on them later.
