Hi Liketobake
Good to hear from you.
To answer your questions,
1. I have a lot of favorite Filipino dishes. I like Adobo, Laing (taro leaves with coconut), Sinigang (Pork with tamarind-flavored broth), Pancit (local rice noddles) and a lot more. Sure, I will share a recipe with you when I come back tonight from work.
2. For rice, we have a lot of rice varieties here in the Philippines. I would go for "sinandomeng" because it is fragrant, soft and fluffy. A more expensive alternative would be Thai jasmine rice.
3. I prefer cooking, though my daughter loves baking. I'm not the type of cook who likes to measure ingredients and I hate waiting for the bread or pizza dough to rise, so there, I'm more into cooking than baking.
4. My favorite kitchen appliance is my stainless steel gas range, of course. I've had this for 10 years now and it still works well. I value this a lot because I bought this from the royalties from my first cookbook. For my small kitchen utensils, I particularly like my color-coded cutting boards, my knives and a wire-meshed skimmer I've had for years now, as I use this a lot to skim off scum and also to lift off fried food. I also can't do without my coffee press. I find coffee tastes better from the coffee press than from a standard coffee maker. If I can have an espresso machine, this is my ultimate dream.

What is the purpose of your color coded cutting boards? Does it mean for certain colors (example blue) you cut certain foods on blue such as meat, and for red you would just cut cheese on it?
My dream is to have an expresso machine too. I worked in a cafe for 2 years (many years ago) and I loved using the expresso maker. It makes the most yummy coffees. However good expresso machines are soooooo expensive.
