I have heard so many different versions for seasoning cast iron cookware. If you have cast iron cookware how do you season it?

Also, keep on the look out for "old" cast iron pans at yard sales, etc. They can be cleaned up easily, a good price, and have been "seasoned" by years of cooking.

I also look at online shopping areas like E-bay for a deal on used ones. You just have to factor in the high shipping rates.

From fried chicken to cormeal, some things just cannot be cooked properly in anything else !

Hi Jenyfari,

I'm an avid fan of cast iron cookware. I have two pieces I can't live without, a frying pan and a grill. Ever since I started using cast iron pans, I've saved a lot on gas consumption and on cooking time. I turn off the heat even when the food is not fully cooked yet and let the heat of the pan finish the cooking. Much as I can enumerate the virtues of a cast iron pan, the downside is the care. Cast iron rusts easily so before storing it, make sure that the pan is completely dry. Season regularly ( I do it at least once a month). How do I season?

I rub the pan on all sides (including the handle) with shortening and bake it in the oven for at least an hour. Try not to use a scouring pad to clean the pan coz you will scratch the surface. A well-seasoned cast iron pan works like a teflon pan i.e. food won't stick to it. This is my favorite pan for frying eggs and even making hotcakes.

Love your cast iron pan. My cast iron pan looks so good, it even made it to the pages of our first magazine issue ("Asia's In Good Taste, The Premiere Cookbook Magazine"). Yes I have found that people who use cast iron just love it and families will often pass their cookware down through the generations.

I season mine by turning the oven to about 300*. Rub the pan with oil and place it on the rack in the oven. I bake it for about 2 hours wiping the oil that has collected in the bottom of the pan about every 20 to 30 minutes.

You can also season pans by frying chicken and bacon in them. It takes longer, but works the same.

I only reseason mine if I have to scrup them because my wife let them sit to long with food in them.

Other than that, they stay seasoned from use.
