View Full Version : My mom's Zucchini Bread Recipe

It is so good and easy to make. No mixer to clean up.

* 3 eggs
* 2 cups sugar
* 2 cups shredded zucchini (about 3 medium)
* 1 cup oil
* 2 teaspoons vanilla
* 3 cups all-purpose flour
* 1/2 cup chopped nuts
* 1 teaspoon salt
* 1 teaspoon soda
* 1 teaspoon baking powder
* 2 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1/4 teaspoon cloves

Preheat oven to 325F. Grease (crisco is best) bottoms only of two 9x5 pans.
In a big bowl, beat eggs until a wire whip until foamy. Stir in sugar, zucchini, oil and vanilla. Add remaining ingredients and blend well by hand. Do not use a mixer.
Divide batter equally between 2 pans. Bake at 325F for 50 or 60 minutes or until a toothpick inserted in the center comes out clean.
Cool for 10 minutes, remove from pans. Cool on wire rack.

I'll move it for you this time, but please, try to remember that all recipes need to be where they should be. This will make it very easy for us all to find a particular recipe that we might want to try.

I've heard of this recipe, but I still have yet to try it.
