Hi All. Can anyone give me advice on how to fry zucchini wedges? Every time I try they come out clumpy instead of nice and smooth like the kind you find at a sports bar. thx

Okay not sure what you mean by clumpy but, first the zucchini needs to be at room temperature. then season plain bread crumbs with salt, pepper, dill weed, and some Parmesan cheese (grated meaning the powderd stuff) I would say if you use a 1/2 cup of bread crumbs use 1/4 cup grated Parmesan cheese. then in 350 degree oil. drop about 6 to 8 of them at a time. let them stay until golden brown. then remove to a papertowel linded plate. Hope this helps you!

If they are comming out clumpy, make sure you have evenly seasoned them. (If I am correct in what you mean by "clumpy)

Are you freezing them first? Frozen ones "look" better when deep fried. Are you using a batter or crumbs? Have you tried baking them?
Zucchini Wedges
Ingredients:
1 large onion, minced
1 garlic clove, minced
1/2 cup vegetable oil
4 eggs, slightly beaten
1/2 cup grated Parmesan cheese
1 tablespoon minced fresh parsley or 1 teaspoon dried, crushed
3 cups shredded zucchini
1 cup biscuit/baking mix
1 cup (4 ounces) shredded regular or reduced-fat cheddar cheese
How to prepare it:
Preheat oven to 350 degrees. Grease two 9-inch pie plates. In a large bowl, combine onion, garlic, oil, eggs, Parmesan cheese and parsley. Stir in zucchini, biscuit/baking mix and cheddar cheese. Divide between prepared pie plates. Bake until golden brown, 25 to 30 minutes. Cool completely on a wire rack. Makes 16 servings (8 slices per pie plate).

Baking zucchini wedges works really well actually. That sounds like a good recipe Benton Tarantella! I think I will try it when I get home today.

I have made courgette ( zucchini ) fritters couple of days ago which are quick and easy to prepare. You grate the zucchini, mix it with chopped onion, egg, stale bread crumbs, herbs, seasoning and shallow fried them for a tasty snack. One important point is to squeeze all the excess liquid from the courgettes before frying.
